Let me explain:
IVs, or Individual Values are set values from 0-31 that determine the difference between the pokemon's base stats and their actual ingame stats through a complicated math formula that no one cares about. The IVs are set when you encounter or receive the pokemon and cannot be changed in any way. To get perfect IVs, you need to abuse the RNG

EVs, or Effort Values, are gained by defeating other Pokemon. Each Pokemon you beat will award every poke that got XP for killing it (including those with EXP share) with EVs. You can find the individual EVs on Serebii's Pokedex or Bulbapedia (For instance, if you look just below the "Weight" category on Watchog: http://www.serebii.net/pokedex-bw/505.shtml you will find he gives you 1 Attack Effort Value.).
Effort values roughly correlate 4:1 with stats at level 100. They do not directly increase the stats, but increase the rate they grow, so a pokemon at lvl 20 with 250 attack EVs will have a proportionally lower attack value than the same pokemon at lvl 50. You can get up to 255 EVs in a single stat, but because they only scale 4:1, the last 3 are wasted, so the highest number you want to get is 252. The maximum overall EVs you can get are 510. Typically, for an offensive pokemon, you will want 252 in Speed and 252 in their offensive stat (Attack or Special Attack) although this varies on a case by case basis.
There are other items that increase EVs gained, Macho Brace will double them, Wings (like Genius Wing, etc) will increase that stat's EV by 1, and Protien and other vitamins will increase it by 10.
Both EVs and IVs are hidden stat values, you cannot find EVs without hacking the game, and you can't find IVs without an IV calculator like this one: http://www.metalkid.info/Pokemon/Calculators/IV.aspx
Keep in mind that because EVs influence stats, and IVs have a wide range, you will have to level up your pokemon and keep track of your EVs that you gave it in order to get the most accurate reading. If you plug in a lvl 50 poke you played the game through with, it won't tell you anything, because the EVs have so warped its stat values that it won't know what the IVs are unless you can tell it exactly what the EV values that you got over the course of playing the game are.

Ahh, I get it now. So my current main story pokemon will get downright slaughtered if I played wifi. I need to finish the single player first, and then start working on breeding competitive pokes right? So breeding is the way to create these high EV, IV pokemon and those are the pokemon used in competitive online.

Breeding is more predictable and easier to manage than capturing wild pokes with high IVs, with the added bonus of getting certain egg moves and an easier chance at a shiny.
That said, you can still do the math to get good IVs on event pokes (the ones standing out in the middle of nowhere like Resharim/Zekrom or Kyuurem/legend dogs.) and even wild ones, there are just a lot more variables that are more difficult to control.
For example, I RNG'd a Moltres in Heart Gold, I had to save in front of it, set my calendar to a random day in 2015, start my game within a second of a certain time on that day, wait exactly 12 seconds before I hit start, then I had to take exactly 122 steps (with repel on) and attack him.
It took forever, and that's quite oversimplified.

RNG Breeding in HGSS was exceptionally easy.

I would go as far as to say "VGC is real, 6v6 singles isn't" but I'm pretty sure that the JAA (Journey Across America) was 6v6 Singles in Ubers format.. but I don't believe that's run anymore.

I actually think it's even easier in B/W. To get a flawless shiny bonsly I only had to get the 2 proper parents, save in front of the egg guy, start the game at a specific time, listen to my 2 chatot say "lol" about 100 times and pick up my egg. Leveling the roggenrola high enough to learn stealth rock took most of the time I think.

Alright, the VGC season has officially kicked off. The first stop in the USA on the counter-clockwise journey was in Seattle, Washington. Bunch of our Canadian buddies attended, but I think the furthest one of them got was Top 8. And some of my buds got Top 4, but the first place spot in the highest division was taken by somewhat of a lurker from the Pokemon sites. Somebody names "The Biffster." This weekend is in San Jose, California.

Personally, I found the Seniors final interesting. I did not expect that at all.. VERY interesting opening plan, but he had virtually no follow-up. I was disappointed. =(

Question about seniors final: + Show Spoiler +Why did he take the Thundurus out so quick when he was sleeping and 1 hp? Seems like he could have waited a few turns and pretty much go 2v1 the rest of the battle unless he was unlucky with the sleep.

That was one of the two major mistakes he made that lost him the game. That whole turn was bad, actually. I would have Protected with Terrakion and used Spore on that super bulky-ass Scrafty (seriously, it's as fat as Bronzong was). It was painfully obvious Fake Out was coming, and losing a turn from Shroom wouldn't be a huge deal.
His other mistake was not using Protect, as well. =/
