I'm no food chemist by any means (yes, food chemistry is a thing), but I do know of this: Maillard reaction. It's basically how flavours at higher temperatures are created. Now this is only one of the things going on. I'd say that you need certain T values to get the reaction in the thing you're cooking, if it needs x time at y T, I can't tell. But bread for example needs a set amount of time in the oven to rise a decent volume. But this is more an assumption than knowing what I'm talking about.

How fast you cook meat isn't really what I'm asking.
Using low temperature for a long time achieves a more even temperature distribution in the food, and hence more homogenous. Meanwhile cooking quickly for a short time creates a large temperature gradient in the food, so you have a seared outside, or whatever other reaction happens at higher temperatures. Hence the characteristics of the food are very different and not comparable.
What I'm asking is about two foods that have identical temperature profiles, just one of them was held at that temperature for longer.

I guess you're right, all it really comes down to is the rate of reaction in the food. See the idea of having bread in the oven for a long time, I would think is so the bread has time to get warmer, but I suppose it might be as well because the yeast reacts slowly, I don't know,

I still don't get why cannibalism is such a big deal. It's one of the old issues that some people still consider of great importance, even though one would thing that we as a civilization have grown out of it. There is nothing immoral about eating a dead person, unless you kill people to get meat on purpose. I am not saying there is nothing wrong - my biology friends have told me that eating human meat is quite dangerous, in particular because of prion diseases (you should never touch the nervous system of someone else from your species), but all the reservations we have against it are rooted in tribal times where it had to be prohibited, otherwise people would kill each other for food, or in religious beliefs. If someone told me in a life or death situation that I should not eat his body after his death because he just wishes so, I would just tell said person to go fuck themselves.

As you said it has dual backgrounds.The major reason is diseases, parasites, viruses and whatever else that is 100% compatible with the other human host. Else roaming armies would have commonly eaten the enemy dead after tribal times. The other is of course keeping your friends and population alive. Especially as people get weak they should get more susceptible to diseases and increase the risk. (There are cases of parasites only residing in humans surviving until modern times due to cannibalism.)
In a famine situation with modern medicine a possibility in the near future it seems very logical to eat other people. Not sure if everyone can compensate for both nature and nurture being against it though.

Yeast actions are prior to baking : yeast are living cells that eat and reproduce in the dough (fermentation). They strive at 25-30°C, not at oven temperatures.
Any cooking involves several reactions, that all have different optimal temperatures (some of them are only slower at lower temperatures).
For bread, CO2 pression in the dough will always increase with temperature, yeast will die at 60°C, yeast enzymes stop working at ~75°C, amidon changes state at ~80°C, the reactions needed for the "inside" of the bread end at ~90°C. Then water will start to turn to vapor. Since crust reactions start at 125°C and stop ~200°C, you are on a timer to get the crust to temperature without drying the inside. (taken from presentation (in French))
You can set a temperature around one specific reaction, but I don't think any food has a taste determined by a single chemical reaction.
Low temperature cooking on meat tastes great, but different.. "perfect" eggs, cooked for up to hours at 61-65°C (just below temperatures where yolk starts to solidify) are Interesting, but different.

Currently I'm buying something from a dude and we've been talking for a week, the guy has 85 positive trade ratings and 0 negative trade ratings but I'm getting impatient. First we had to transfer the registration of the item, he said it was going to be done Monday last week (7 days ago). On Wednesday I contacted him to see if it was done and he gave me the reference number and he had omitted to contact me about it. On Thursday the transfer was processed and I let him know, so he could ship, I specified to please leave me a tracking number so that I could be at home to receive it, and he said "Ok I'll ship it Friday provided I'm not called into work".
Since the item is now registered to me, I'm not too worried because he has no choice but to send it to me or he could get in trouble. But now it's Monday and he hasn't bothered to contact me to say "I haven't been able to ship it out" or "I shipped it out and here's the tracking number". No comms from him since Friday.
I just checked and he's online right now in "Private messaging" so as far as I know he's in the process of sending me the tracking number, but I don't know. How long should I wait before I ask for an update, considering I asked for an update on the registration on Tuesday last week since he didn't get it done on Monday like he said he would?

But now it's Monday and he hasn't bothered to contact me to say "I haven't been able to ship it out" or "I shipped it out and here's the tracking number". No comms from him since Friday.
I just checked and he's online right now in "Private messaging" so as far as I know he's in the process of sending me the tracking number, but I don't know. How long should I wait before I ask for an update, considering I asked for an update on the registration on Tuesday last week since he didn't get it done on Monday like he said he would?
I mean is it a car, boat, ATV, motocycle or a gun or what are you buying you have to register to your name? I'd say provided you were courteous, and just chimed in asking for an update you're in the green. I also don't know how you paid for this or how much you paid for it. I personally these days would opt for something where my bank can digitally reclaim funds in the event of skeeziness but that is me. I paid $275 through EMT which can't be refunded. It's a pretty small risk considering he has very positive reviews but expediency is nice... and communication is very nice. Anyway I'm not quite sure how to politely ask... something like "Hey X, have you had a chance to go to the post office yet? Thanks" Hi X, Please let me know when you send my <item>.
