Fish : NONE Reason : I hate fish in general. Don't eat that stuff.
Vegetable : Tomatoes Reason : Coz they're awesome in multiple ways of preparing them.
Fruit : Orange Reason : Tastes great and it energize me.
Shellfish : No idea Reason : Can't say I'm much into that type of food. Any would be good I guess. I do eat that sort of sea food, unlike fish.
Starch : Potatoes Reason : Awesome food in general.
Nut : Sunflower seeds Reason : Nom-nom. I sometimes can't get enough of these things.
Herb and Spice : Onion and Mustard Reason : Love them. Can't see myself without these two. Thou they're not exactly "herb and spice".

Sure, people could bring Cloves or Saffron to their desert island, but they are not nearly as useful as pepper: their taste is really good, but lack the general applicability of pepper.

Fish : Salmon Reason : Good in many different ways, raw, cooked, smoked, etc
Vegetable : Asparagus Reason : Almost broccoli wins it, but asparagus gotta be the greatest vegetable.
Fruit : Avacado Reason : Guacamole. Or just plain. One of the great joys in life.
Shellfish : King Crab Reason : Because its too expensive to eat normally.
Starch: Wheat Reason: Beer. Bread.
Nut: Pistachios Reason: Are there people who would pick something else? They probably just forgot about them.
Herb and Spice: Basil, Garlic Reason: Flavorings.

Cucumber technically is too. A fruit is technically the container of seeds for the plant: thus cucumbers, courgettes, aubergines, tomatoes, peas, beans, etc. However, in cooking anything that is mostly used in savoury dishes is generally classified as a fruit (like all of the above) and everything that is mostly used in sweet dishes (desserts) is classified as a fruit (including rhubarb, which is botanically a vegetable).

Fresh water and salt I understand as you could normally expect to find that on an island. Oh well, OP's rules. Guess I can go and change my list
