Oh man. I love thai food. I'd say...
Sa tay chicken, which probably wouldn't be too difficult to make.
Pad thai or massaman curry would be great as well, as stated by previous posters, or thai yellow curry.
There was also this thai spicy spagetti I had at one place, that I never really found anywhere else. If I knew what the real name of it was, I would really recommend that because it was so good.

Something with those flat rice noodles... as in the beef picture... those are so good. If the sauce is light, and spicy... with those flat rice noodles its just unbelievably good.

A yellow curry or massaman curry would be great, or as mentioned the flat rice noodles are great. As are all the soups.
Man Thai food is great I wanna walk up the road and get some right now @_@
Also there is a really awesome tasting dish with turmeric but I can't think of the Thai name for it, but from taste it seemed like the base ingredient for the sauce was turmeric in coconut milk plus additional spices... Maybe a Thai member here would know it

Ima have to go there next time I go home. Actually this dish "bun thit nuong" is a Vietnamese dish..and you even write it in Vietnamese...You sure you are not going to the wrong restaurant?. Thai food are ok though, maybe we have some flavor similar with Thai so I dont find it special.

Thai cuisine is so awesome, I'm so lucky I lived in Thailand for my entire childhood My favorite dishes are in no particular order,
pad thai
rad na
massaman curry
satay chicken w/ peanut sauce
sesame prawn toast ( though that may be chinese )
Pad see ew
green curry
Manga / sticky rice is a classic pudding too, some guy linked it before me though.

Crap. I'm thinking of the Vietnamese place atm.....
The Thai place has something similar to it though..... Can't remember what it's called. Rice noodles, fish broth, cabbage, bean sprouts, green onions, and other fresh vegetables, peanuts, and pork..... Someone wanna give me a hand with the name here?
They also had amazing soups, my favorite being tom saep.

See... I would be totally up for trying out some of this stuff if I knew where to get the ingredients. I haven't found a decent satay sauce in Kingston yet and most of the chinese grocers here have a pitiful selection, not to mention no translations

Is there a Maangchi equivalent for Thai food? I am a really nooby at thai food. But I always wanna try out new recipes.
