If someone's a bit better than others then teams don't really have the ability to shut down their farm if they're on a carry and so they tend to snowball out of control a lot quicker than you would see in a pro game or something, where both teams are actively trying to stop the farm of the other teams' carry. From my limited experience with LoL and from what I've heard from other people, carries in HoN do actually scale a ton more than in LoL (where every character scales a lot more into lategame, not just carries) so I think it's both this and the previous factor I mentioned for why it seems like that. Carries just go around two shotting the intels when their early to mid game nukes do absolutely zero damage to a farmed up carry, it can definitely be extremely frustrating to play at points

The one problem I have is that the games seem to snowball a lot, at least at the level I am right now. In my experience, a lot of snowballing comes from some of the godawful picking that tends to happen in pubs. If one team picks 5 hard carries, and the other team grabs even one "reasonable" lane, they're going to be able to guarantee that they have a farmed carry going into mid-game, and then the snowballing really starts.

This right here. Pubs pick terrible ass lanes and that allows a ganker with a decent lane to just snowball to all hell. This is why Fayde is considered a super pub stomper, because she shits all over squishy carries early game and just bulldozes her team to victory.

This is also a problem if you play hard support and there's a hard ganker on their team and your team doesn't ward / call missing. Die twice and your death count rolls towards 10 so stupidly fast

While I'm sure what prompted you to say that, you're confusing the verb "to carry", with the noun "a carry". A carry is typically a hero that demands farm and shines during lategame (Chronos). The act of carrying is simply winning the game for your team, and can be done by any type of hero. Thus: Every hero is not a carry, even at lower levels. But you can easily carry the game with any hero at lower levels.

Thus: Every hero is not a carry, even at lower levels. But you can easily carry the game with any hero at lower levels. This man speaks the truth. At lower levels you can also almost instantly tell if your team is going to win or lose. Amun Ra + Scout on your team means people who got stomped by them but can't play them if they life depended on it. Ra is usually the top farm of the game (this hero's farming is even more ridiculous than Soul Stealer) but doesn't really know what to do with the hero except killing creeps or suiciding by going 1v5 and thinking "I've got resurrect so I'm fine". True story. I'm not sure when I've seen a team in 1300-1500 range with Ra and/or Scout winning. People can't handle Ra and Scout is just a bad hero, couple it with bad player and you got yourself 5v4 with feeder (best case scenario, he's just going to hide the entire game and KS once or twice). From my experience at lower mmr it's best to stick to some semi-carry/support heroes. This way you can do something early to mid game and don't suck monkey balls come late game. If you're lucky enough to get a smurf or two on your team you can then just happily revert to playing support roles or help with ganks. Heroes like Slither and Hag come to mind (I just love to pick Slither and go puzzlebox with him, mega push power coupled with instant punishment of Ra-type or stealth-type heroes, and he fits into basically every lineup, which is also nice).
