Because the series is episodic in nature there are really not very many inside jokes from episode to episode, I mean you won't know the ponies *as* well, but you won't be missing anything major, plus episode 2 is really comparatively weak.

Ehh... 7 actually introduces everyone, their homes, their families kind of, and their personalities really well.
4 5 6 don't seem to have anything necessary for epi 7 now that I watched, I'd watch epi 7 first and then go back to them.

I remember episode 7 making one reference to 2, but it could easily slip by without you noticing. All episodes (except 1, 2 and 26) are rather stand-alone, and picking up the scarce references to previous episodes isn't going to make or break your experience.

It's a part of a continuing story, but once you figure out that the ponies are going to a dance sometime in the future, the story is self contained. It's my opinion that you don't really need to see the struggle to get the tickets to appreciate that episode. Unless there is a major part I forgot about...

Truthfully the pilot does a poor bad job at it, the main premise is nothing like the first two episodes would have you think. I'm all for you to watch a bit more of it, but with that harsh of an opinion of the first episode I'm not entirely sure if the show is for you, which is okay. The suggested episodes, like 3 and 7 are fine, in any case. They're standalone enough for you not to miss anything vital.

I think if you're not sure yet, you should check the amounts of fanmade content that is constantly being produced for the show. For example, there's an Ace Attorney style game being made, a fighting game, tons of videos on youtube, fan-art and -fics all over the net and finally, Equestria Daily, a site with constant posts highlighting fanmade content like previously mentioned videos, fanfics and the like. That is far too much effort for a troll, wouldn't you think?

I'm surprised we've gotten this far without anyone mentioning MLP vs. Starcraft considering this is a Starcraft-focused website. Sure, it's a bullet hell and not an RTS, but I found it a lot of fun for a fan project, and the best part is that it's actually playable at this point.
