Food Porn!: lime sriracha chicken wings

Hello TL!
It's been a while... I know.

Sorry for the super late hour post, but I had to get this post up as soon as possible!

Prep time should be about 25 minutes. Idle time can be from 2 to 24 hours to allow the chicken to marinate. Cook time is about 45 minutes. This recipe will feed 3 to 4 people.

INGREDIENTS
  • salt
  • pepper
  • cilantro
  • juice of 1 lime
  • 1 lime cut into halves (for garnish)
  • 2 teaspoons (~9.6 ml) of cumin
  • 2 1/2 (~12.32 ml) teaspoons of sriracha chili sauce (you can add more if you want more heat)
  • 3 garlic cloves
  • 2 lbs of chicken wings


PROCEDURE
  1. Finely chop your cilantro and garlic.
  2. In a bowl, combine your cilantro, garlic and line juice.
  3. Stir in sriracha into the mixture. This will create a marinade for the chicken.
  4. Pat the chicken dry with paper towels.
  5. Rub salt, pepper and cumin onto the wings.
  6. Place chicken into a resealable plastic bag.
  7. Pour marinade into the bag.
  8. Close the bag (try to remove as much air as possible) and shake to coat chicken with the marinade.
  9. Place the chicken in the refrigerator and allow to marinate for 2 to 24 hours.
  10. Pre-heat oven to 400°F or 204°C
  11. After the chicken has marinated for your desired time, remove it from the refrigerator.
  12. Place chicken in a baking dish. You can place parchment paper in the baking dish for easier clean up.
  13. Bake chicken for about about ~43 minutes.
  14. After the initial baking process, set your oven to broil. Allow the chicken to sit under the broiler for 2 minutes to brown the chicken.
  15. Remove chicken and garnish with lime slices and cilantro.


And you're done! :D

If you want to make this a full on dish, I suggest you add a veggie. I made cauliflower with this dish, but I didn't include it with the recipe because this recipe is all about the chicken! om nom nom.

That looks really good! I actually have a bag of frozen wings and a bottle of sriracha sauce. I think I'll try it this weekend.

I love the spiciness of it but my fiance can't handle it what would be a good substitute for the Sriracha?

HAH Wings of Liberty. I get it! We have a jug of tap water in our fridge labeled Springs of Liberty thanks to Wax.

you can try these options:
1) you can just leave the sriracha out all together -- just bump up the lime, cilantro and cumin a bit more. cumin will still give it a little bit of a kick, without the burn of chili.
2) dilute the sriracha / lower the amount

I actually haven't tried making a sriracha and fish dish before!
But that does sound very tasty. :D You can definitely do a salt, pepper, and cumin rub on a piece of salmon. Maybe with some sort of lime/sriracha glaze ontop of that salmon (or shrimp)? Grilled shrimp or salmon with those flavors would be pretty good!

I've actually never cooked or eaten swordfish, so I'm not sure how well those flavors would blend.

I think that would still work! Though for the sauce you'll need to maybe add a thickener and you'll probably have to crush into a finer paste.

Question for you: Do you think someone who doesn't like cilantro would like this dish? My girlfriend is crazy about it, I can't stand the stuff.

The cilantro flavoring is very very light in this dish. :D my goal was to highlight the lime and sriracha more than anything, so cilantro is definitely playing a supporting role here.

you can totally leave out the cilantro if you want!

I basically live off Sriracha...

I actually have some chicken wings sitting in the freezer, I am 100% making this tomorrow. As a college student living off campus for the first time, it's been really hard finding things to cook that don't involve a ton of ingredients or make way too much This looks perfect though- just need to go get myself a lime ^^

Sriracha is fermented. Pureed chilies by themselves won't have very much flavor, so vinegar is important. You could substitute a mild vinegar based hot sauce like Tobasco or Frank's.

This is an excellent recipe.

I made this yesterday. Girlfriend went crazy over it! Told her I got it from a starcraft website lol

I made this today thanks to your pictures and instructions - amazing!

I changed a few things but it was still awesome.

Used drumsticks instead of wings
Added fresh basil leaves to the sauce mix
Added minced garlic to the sauce
