Dragon Priest masks? Those are pretty fun to get, and you get a special bonus at Labyrinthian if you possess all of them.
I fully returned the Thieves Guild to its former glory and got the achievement for that, but I ended up using some console commands to go through some of the more redundant radiant quests.
Have you tried the Companions questline? Or the Wolf Queen questline in Solitude?
There are plenty of interesting quests like the Daedric princes, and Wolf Queen questline. Also, mods, try checking out skyrimnexus. The Creation Kit is also coming soon
Yesterday i just installed a shitload of mods and started everything from scratch.
No longer am i a level 56 nord dual wielding barbarian.
Now im a level 4 dark elf archer / sword-shield hybrid. Stealth crit their ass then charge in for teh kill.
Also ive put restrictions on myself, with the Nord i abused the crafting / enchantment system and only had it on the 2nd highest difficulty.
This time round ive got increased difficulty mods (Dangerous dragons, war in skyrim IV) and all i can do is buy / scavenge weapons and armor, maybe improve them i havent decided - i also bumped it up to master because, well...i like to breeze through a game and then have it hand my ass back to me the 2nd time. Light armor is going to be fun indeed. (Golden claw spider one hit KO me with her poison. :<)

Overall an amazing experience so far ^^ the game looks a shitton better with all the enhancements, i walked up to water the first time and got the feeling i would fall in, IRL

Well you still have at least the companions(fighter's guild) to do of the major side quest story lines, it's pretty dungeon heavy though. It does have couple cool moments anyway and doing it next would sound sensible to me.
Play through again on the hardest difficulty, and you're not allowed to put perks into anything but 2-Handed fighting, Heavy Armor, and Block. It's what I did and I'm still working through it. It's unbelievably difficult.
For me, my first playthrough was with a 1h-shield standard melee warrior, didn't really have an identity except I liked killing stuff. Finished most of the quests (all 'questlines' except College of Winterhold, most of daedric artifacts) and well, I needed a better identity for myself.
So, on my second playthrough, I grabbed a couple sweet mods and went Jedi. Sort of Jedi, kind of a Sith, but no, I'm not completely on the dark side yet! Still 1h (I hate 2h) + invisibility (illusion spell), more sneakish, still like killing stuff but also on a path of becoming the emperor (assassinate emperor + kill Ulfric who seems like the 'next best thing') and yes I wield a RED lightsaber like a boss.
Anyways, creation kit is going to bring a whole new wave of awesome content so you can take a couple days off while the modders get on that.
Honestly theres not much to do after you finish the main quests,you can wait for mods,but besides there theres nothing else to do in The Elder Scrolls "3 inches ocean" Skyrim.

Its so easy to max out on everything,not much of a point in speccing in a certain area.
