They were absolutely irresistible at the party. Staring at you with a juicy red allure imagining the gritty taste of the chocolate as it would melt on your tongue. Only to be completely blown away when you find out there is actually cheesecake stuffed inside it! Starting with the more solid tasting chocolate crumbs on top, following by a rich, cool, creamy cheesecake only to explode with the moist sweet taste of the strawberry as you chew down for the second time. That lasts a few seconds until the chocolate coating on the bottom of the strawberry begins to melt and another rich, taste spreads through your mouth starting from the sides and slowing working towards the center of your tongue.
Alas, I was absolutely compelled to make them again. The good thing is, they're really easy to make, they just take some time, but if you're ok with that, they make for a great party desert or maybe even a surprise treat for your girlfriend/boyfriend when they come home from a long day at work.

You need:
-Strawberries (the larger the better)
-New York cheesecake (or another flavor that you prefer)
-Oreo cookies
-White bakers chocolate
1) Wash the strawberries and cut off the ends with a fruit knife so that the fat end is now flat and you can sit it upright. Continueing with the fruit knife, stab it deep into the strawberry, and with a sawing motion, make your way around the strawberry and hollow out the inside.
2) Take your cheesecake, cut out a slice and remove the cookie base at the bottom so you're left with the creamy part of the cake. Put this into a bowl, take a spoon, and mash it until the texture is like those times when you were a kid and you mashed your ice cream until it was really soft. Shouldn't take long. Once you have this, just use a teaspoon and fill up the strawberries core with it. It's ok for it to have a little mound protruding outward at the top, don't worry about it.
3) Now get your oreo cookies (i only used 3 cookies and i had a ton of crumbs left over). Pull them apart and use a knife to scrape off the stuffing. Put the cookie halves into a zip lock bag and proceed to beat it to death. I prefer to make it more fine, but if you like it more chunky, that's your choice. With the strawberry covered in cheesecake at the top, simply invert the little bugger and plunge it into the oreo crumbs followed by a twist of the wrist.
4) Time to dip the chocolate. Take the bakers chocolate and cut them up into small pieces, they don't need to be too fine, but the more fine they are, the less time you spend heating them up. Prepare a water bath by taking a pot and heating it up to a medium temperature so that its just bubbling at the bottom but not outright boiling. Take a metal bowl and put it on top of the water and place the chocolate in there.
Make sure not to get any water into the pot of chocolate while you're doing this. The heat from the water will warm up the metal bowl and that will distribute the heat a little more evenly and melt the chocolate. Heat it until the chocolate has a thick liquid consistency (too runny and it'll be hard to stick to the strawberries).
Simply pick up your strawberry, and dip it into the chocolate and set it aside on wax paper and allow it to harden.
And you're done :D
