Hi, i have searched the forum for this but found nothing  My problem is as Protoss to scout Terran if he is doing a fast expansion or going for early pressure.
I have tried hallucinated pheonixes. I have also tried rushing a observer out and building my own expo just before and if i scout no terran expansion then i cancel my nexus and go defensive. But i feel like the obs is just late enough to scout the early pressure so i have no time make defense before he is at my door.
If i get my first scouting probe into his base are there any signs i can look for? such as less probes in the mineral line?
How do i deal with this?

Poke up the ramp with your inital scouting probe at about 3:25 - at this point he should have one marine and you'll be able to see if there is a tech lab on the rax, how many gasses etc. You can do a standard 3 gate expo, keep your units up your ramp until the expo is finished, and still be able to defend - you can only not defend early bio pressure if he gets a good position on you and your unit comp/ff's are bad.
You can do a 3 gate fe, then drop your robo at 6:30 and you'll be fine to any kind of cloaked banshee pressure also.

The stalker is your best friend for early scouting. Poke up the ramp and count units and look for bunkers. If you are not experienced enough to tell what they are doing by poking the ramp then start doing it more often and you will get the feel for it. If you lose a game due to poor scouting then watch the replay and look at what you saw!!!?!
As far as a safe FE, I notice a lot of high level toss will make lots of sentries. Split the army or get them to waste a stim and you can handle early pushes with ff.
I personally like to pressure early with stalkers and cycle the shields while I get dark templar. If he walls his ramp I will get void rays to get vision of the high ground. If I see 2 early gas I am pretty confident with a FE. It will usually be marine tank or cloaked banshees. Just marines at the front with bunkers and I get early detection.
Just develop a plan for each thing you scout and you wont feel as lost. When things dont work out then modify your plans.

Thanks for the info, i forgot to say im in gold league so im not experienced enough to count his units and know what he´s up to...I need info that is easier...like actually seeing the command center ;-)
So as I understand there is no easy answer, the answer is that I actually just have to become better at the game 
Im gonna learn from what you´ve said and hopefully i´ll work it out!

There's some basic stuff like marine + no gas = nogas expand or some sort of marine allin. Gas before rax means heavy tech, probably cloakshees. Tech lab before marine means reaper or very early marauder pressure.
Other than that though almost all Terran builds go depot->rax->marine+orbital, then the marine denies scouting. As such for any build beginning like this, you need to rely on stalker poking to try and figure out what they're doing. This is mostly just experience, learning what different unit counts and compositions mean.
Be very careful about making hard and fast decisions about what you see in a poke, though, as Terran can basically make their build look like whatever they want. Polt, for example, will often build a bunker and show only marines, while hiding a second rax making marauders away from his front.
What most Protoss do is either heavy gateway (1gate FE into 3 more gates, 3gate pressure etc), or they do 1/2gate robo. The former makes itself safe simply by having lots of units (usually sentries), and ensures banshees won't result in an autoloss by pressuring or getting a robo just in time. The latter gets a fast obs and then reacts to what that sees.
If you're ever just blindsided by something you had no idea was coming, make sure to watch the replay and note what he has early on in the game, then look out for that in future games.

it can be really hard to see differense between 1, 2 or 3 rax with the poke up his ramp but many terrans will probably do a misstake that shows you his build. Else you need to find something that works vs all of them. Learn when concusive finish so you know when you need to get back home. You should be able to get expansions vs all of them.
If he takes gas(initial probe scout) and you just see marines/ bunkers you know tech is coming.
If he takes no gas then it is allin or very fast expansion of course and you can camp with your units close to his ramp and go upp attack some and down let shield replenish because he cant kill gatewayunits with marines unless you do misstake. Bunkers and trying to secure lowground indicates expansion and lot of marines allin.

You dont need to directly scout a command center to know he is doing an FE. The biggest indication of strategy is the gas timing,
- 0 Gas, you see no Gas you can assume 99% FE, 1% Marine SCV all in,
-1 Gas he may be still doing 2 Barracks Concussive Shells pressure FE. if i scout this i like to go for a 2 Gateway Robotics and get a single immortal and an observer. Or he is doing a 3 Barracks, very popular in lower leagues,
- 2 Gas you can tell he is not doing FE 100% sure, he is doing something else like a push with lots of tech or just Banshees in this case i like to get an expansion because you know he is not going to put early pressure with MM and get a Robotics to get Observers because there is a much higher probability he is going for Banshees.
I really like 2-3 Gateway and a Robotics because you can be safe from everything (if you have the micro).
Doing things like going up with ramp to see what he has up there can help a lot. (If you see bunkers and only marines and if you can see he has no addons on barracks and/or factory or if he has a idle barracks and factory, obvious shit they are going banshees)
