I'm not sure exactly how this will work, but once you buy the game, add it's CD-Key to your B.net account and choose the language version you want. Of course, you'll need to download the game digitally from B.net to play the English version, instead of installing the Spanish one you're bound to pick up in a store.

http://www.teamliquid.net/forum/viewmessage.php?topic_id=118158 You can use the English client and play on any server, just need to switch around some basedata files (20 mb each, veeeeery easy to do).

I haven't tried this, but can't you just change all ogg and wav files in your frFR.SC2Assets file? well, if you don't know what do you have to change using the MPQ editor to make your english client connect to the EU server, you can still change the sound files one by one manually, right? if so, just replacing the assets file to an english version would make it easier. lol what I mean is to rename this file: enUS.SC2Assets from your english version located in: "C:\Program Files\StarCraft II\Mods\Liberty.SC2Mod\" to: frFR.SC2Assets and put it in your french version. I haven't tried this, so make a backup of your files. I don't have the english one to test it by myself. Can someone with an English version and a not English version test this for me, please?
