Aww Sean <3
If the OP does get around to putting my channel up there, I've created this content grid you can link to that contains only my Starcraft 2 stuff, so you don't have to risk accidently watching WoW content (the horror).
I definitely think psy deserves a little more than a sentence, he has great analitical zerg commentaries and he mostly casts his own games playing against very good players, definitely my favorite guy to watch on youtube, except maybe for Artosis, he may have less vids than everyone but he has some real quality amazing games on there and his commentaries are also excellent.

List could certainly use a bit more research and detail I feel for it to be 'ultimate' and definitive
I noticed ftwbroadcasting is not on your list, they're a nice duo with a little bit of a following and they do pretty solid dual casts, worth checking out!
Good list! Found more casters I never knew existed! Day9 is my favorite caster for how absolutely amazingly helpful he is. Husky is good too but because he can make me lol. And then there is ForceSc2Strategy who helps me with all kinds of builds.
...And there is Mesk ( http://www.youtube.com/mancatcher ) - my favorite when it comes to having fun. He used to cast pro games during beta (all worth seeing just for his commentary sake), but now he says he got bored of that and he accepts random games ppl send him (which often results in situations that doesn't happen everyday, like 0 hatch hydra win over a well settled terran, 100 banelings on the field, a vortex with your teammate's 3 banelings in on 100 M&M - before the "archon toilet" was "invented", I guess, etc.), so he can do what he does best:
Try this short one for example:
..make fun of those ppl (they appear to like it), freak out at random times, talk the funniest theories and shit 'bout SC2, curse, go extreme and super-enthusiastic when the time is totally not right and then immediately switch to calm, regular casting. He's got that intelligent and dark kind of humor that reminds me of Jon Stewart. He also likes to stay quiet when nothing really happens (instead of shouting things everyone knows) which reminds you he doesn't really give a shit and he just wants to have fun himself (also by making fun of himself at times). You gotta see more games to experience it all as he's not really repeating himself much.
He claims he's used to be a voice actor and I'd believe him.
He's also a modder and has quite deep knowledge 'bout things all the other casters have no clue about - game engine, scripting, textures etc. and he often shares his views on how things are in SC2 from that perspective - mostly 'bout what Blizzard did bad.
He also plays custom music everytime. Sometimes it's some totally epic tune, out of place like hell 'coz some noobs are playing, etc. He's got really good musical taste, I'd say.
Oh.. he doesn't necessarily call all the units the way they're called. He's got his own names for some, so don't be surprised hearing 'bout "mustaches" or "snow globes".
So... definitely worth subscribing 'cause what he provides just stands out and is not there to teach you anything, but entertain you like a good sketch or something + other stuff.
If you send him funny / silly / weird games - 1v1, 2v2, 3v3, 4v4, ffa, even low-level, he'll most likely cast them.
edit:
Yo dawg, apparently I just advertised Mesk along with Mesk himself, so you can learn 'bout Mesk from Mesk while you learn 'bout Mesk from Me. Cheers Mesk. I've registered just to do that.
edit 2:
xHydrax definitely deserves more hits. Some ppl complain 'bout his voice but once you "get to know" him better, you just can't not like that symphatetic guy and his imperfect Spanish accent. He's also 35 in case you like older men, but srsly... His maturity > all other casters. He also provides some unique matchups as he kind of focuses on Korea.
Used to watch loads but the only ones I really follow now are Artosis, Day[9] and PsyStarcraft - they seem to have the right balance of entertainment and education. Dont really have time to regularly watch more than these 3 and GSL.
husky/askjoshy/diggity/schickysc (http://www.youtube.com/schickysc - one to add to the list) occasionally get a lookin if it's between players I particularly like watching.
They are "singcasts" done by Blinn (maker of raynor party). The games are commentated in song as they happen. There aren't many games up right now but they are pretty freaking funny and more are on the way. I think they're really entertaining and worth checking out for a new spin on casts.

Can it be done?
Sure, go ahead.
I would really want do do this myself, but I wont have the time for a while.
If anyone would like to set up a liquidpedia page on this please do!!!! I think it would be greatly appreciated by the community and a very useful resource
I did some work on a similar project over at SCA (except this was more of an in-house caster list), I'll see if I can narrow down some good ones from the Google cached page and post 'em here. Looks like you already got a solid list going however, nice work :D
Note that there's a lot of inactive channels on there, and varying levels of quality. I'll sort through them and update this post w/ a decent list once I'm home tonight.
BTW: TY for the inclusion, a thousand capybaras shall go surfing tonight in your name -
TaKeTVTaKeSeN: http://www.youtube.com/user/TaKeTVTaKeSeN - ze Germans (can't understand shit except buildings & units names, but I tend to watch them sometimes when they come up with a game no one else has), lots of uploads + they hired an "exotic" dancer for Xmass and did a video with her as a gift to their fans, so I guess they're ok.
