I intentionally didn't start with master key for my first run through because I didn't know where I was going anyway, so opening up side paths and shortcuts and all different stuff would have definitely confused me.
I still haven't decided if I'm gonna get it for my 2nd run through.

I keep wandering into these places where I'm totally out of my depth. That place with wights was giving me trouble but I cleared most of it thanks to those curses that let me hit the undead. Then the place right next to where the eagle puts you with the regenerating skeletons that followed me ALL THE WAY BACK TO THE BONFIRE AGH

You're trying to ring the 2nd bell I assume?
My recommendation would be to not go through New Londo ruins (something I should actually go back through and clear), or the Catacombs (regen skeletons). Let's put it this way - I rang the 2nd bell quite a long time ago, and I now am considering going into the catacombs. I have like 4 boss souls that I need to get to continue, so I now have to decide where I'm going, find them and kill them.

New Londo Ruins I think was supposed to be the second last boss area.

Having watched more of the PvP side of Dark Souls and not the speed running, I think the fastest speed run is with the pyromacer class and just flinging pyromancies at bosses. Takes a ton of souls to get a +5 Ascended Flame though, my god...I think I had to grind O&S like 15 times, Golem 10 or so times, and a few other bosses to get it just to +15 normally.
I think it takes around 1.2million souls for a fully upgraded flame? Would have to double check the wikia, I just know it's rediculously powerful and funny to use in PvE.
New Londo I generally do before Ravelord I think, it's been a while since I've played through the game, currently replaying all of the old FE games I have >.>

Hard Mode is ok. A lot of it is thinking more than anything else. One of the up sides is that you don't need to rush missions. The complete flexibility you have in being able to reclass and do anything you want is perhaps a bit of a burden if you're new since you won't know exactly what's going on and it's easy to get drowned in options... If you need anything just PM me.

Original FFT. I'll admit that you can just decide to get rid of the challenge with TG Cid (to some extent) and Calculators (overall), but if you don't it's a really fun and challenging strategy game. Also the story is dope no matter what.
