I think it is coin flippy if you go proxy stargate. But if you start with oracles when you are on 2 bases, it becomes much better and not insta loss

If you mean a 1gate FE into SG oracle that's rather coinflippy because it dies even harder to some all ins than FE-> robo (some people like Parting still do it on 4 player maps sometimes). Imagine going 1gate FE -> stargate oracle (which you should keep at home initially because of a DT threat) and then someone shows up with an aggressive 1base phoenix all in. GGWP D:
But do it later and there will be hallucination scouting going on and 2 stalkers + overcharge should be ready anytime and your 300/300 investment will be worthless => you open yourself up to a timing or give your opponent an easier and earlier third base (leading to an even bigger timing later). Since charge/templar archives is the most standard choice in PvP your oracle might even get feedbacked and die, depending on your SG timing

Two or three Stalkers in the mineral line wins against a proxy Oracle and allows you to tech, so I don't think people need to assume that there will be only Stargate play in PvP.

I'd be really careful with those for a while but I don't think they'll fade away. You don't necessarily have to kill an oracle to be safe against it. Just having 2 stalkers ready should do the job (or 1 stalker and photon overcharge). And the usual oracle opening was into nexus/robo or robo/nexus depending on how safe you think you are so if your oracle doesn't do damage there's still a counterattack threat by the robo player. Oz and HerO for example do this a lot. They chronoboost out 2/3 immortals and add up to 2 gateways depending on how much they want to commit to it and hit a timing that exploits the lack of immortals. Worst case scenario they force the opponent to chrono emergency void rays and produce more sentries which slows down their teching. I'd say phoenix openings will be used a lot more until people figure out how to not take damage from oracles. A lot of the time even before the patch the oracle wouldn't die and the game would continue. That'll just happen more often now and oracles will punish a lack of defense harder
