Well, he was pretty much dead after that. He banked everything on the infestors and he didn't even get one fungal off afterwards. And only lings vs collosi is never a favorable engagement.

Well, to be fair, after spotting the infestors puzzle moved his obs straight back to his main meaning that the obs wasn't following the army thereby making it harder to spot. He had to have been watching right as his infestors moved down his natural ramp as that was his only chance to spot it.

Because we can't focus on our army all the time, we got to inject larvae and spread creep. We only look at our army when we spot an opponents dot near us.
That's right the other races only have to look at their army.
Try playing zerg, every 15 secs we spread creep in different directions depending on map, every 5 secs we look at the minimap to spot for drops, every 40 secs we inject larvae, every 20 secs we send a scout. Its just different, we focus on macro, not micro. If you think you are great for sniping obs, then congratulations. You are a pro at sniping obs.

Terrans have to back at the base to build depots and production.. I think it's just hasn't been THAT crucial for Zergs so far, as most of the times they cannot do anything against the obs anyhow as they have only roaches/ling.
But maybe it's true that Zergs don't have to babysit their army as closely.
Terran shines with micro, zerg with macro. Obviously this is a gross generalisation, but you should pay more attention to the core of your strength.
So if you are doing a build that relies on being undetected while putting your crucial units at risk, wouldn't it be prudent to look for an obs you know that can be there?

Skill difference
Stephano is the only zerg i see killing observers all the time with his infestors.
I watch a lot of stream and pretty much every high level player fungal stray observers.
But Stephano is the first I've seen actually spot borrowed moving roaches on creep...

Well Terran's can instantly scan and see it and kill it with their units that already shoot up.
Zerg players often see the Observer, but then think "should I waste a couple of fungals? Should I morph an Overseer, bring him over to my army then waste a fungal and some energy for IT's to kill it? Is it worth bringing Queens with the Overseer?
It's a whole lot more effort most of the time, so they just don't bother.
I guarantee many of the pro's see them just the same, it's just that the tools available to deal with them aren't as easily accessible.
It's not a waste of a fungal when your options are fungal the obs or die.
