If you are in an outfit, your outfit leader talks to the server representatives of your server and gets your outfit signed up. Then there is at least one meeting where you decide on who gets to bring what numbers, because server smashes are limited to a specific number, so you can't just show up on the day with however many people you can bring.
Each server has different rules and procedures on how to decide who brings how many. Some are more open where zergfits are allowed to bring the same number as anyone else, some more restrictive where "good" outfits are allowed to bring more than "bad" outfits, but that is up to the servers organization and not laid in stone by the server smash admins.
Once the numbers have been decided and your outfit knows whether you are in or not, there are usually practice sessions to get the opening right - which is important because the opening is much like a build order in Starcraft and screwing it up can lose you the game - and strategy meetings, force commander voting and all of that, though that, again, is dependent on how your server does things. The server representative will know.
On the match date your outfit will get a number of accounts from the server reps because all future matches are supposed to be on Jaeger, which is a live server only accessible to those accounts. You also have to be on the PS2 Pickup Teamspeak which is mandatory for the event. From there on, you just follow the lead of your force commander/platoon leader/squad leader.
A full match usually takes 2 hours in which time you try to get the most territory possible (with some limitations due to territory being "out of play" to make the map balanced). The Connery vs Briggs match will be more restricted since Briggs doesn't have the numbers, so the battlefield will be restricted to a small amount of bases. Other than restricted territory, no other rules apply, you can pull whatever you like and use whatever tools that you have available - though of course cheats are not allowed - to win.
If you are not in an outfit, it's unlikely that you'd get in, but talk to your server representative nonetheless, maybe your server has a public squad for people like you. However, there will probably be a lot more applicants if there is one, so chances are slim.

It has been my experience that "Elite" outfits don't actually have a noticeable impact during a Server Smash. Yes, those guys can stomp average players, but in a Server Smash they aren't facing average players. They are facing the most dedicated players from each outfit and the skill difference is far smaller than you think.
Either way, in the end it's a numbers game decided by the leadership of the server and the individual squads, not the skill of the players.
I was quite impressed by Watersons performance during the merger smash, so as long as Emerald brings a lot of the former Waterson leadership, they should have an edge. If they bring Mattherson leadership then Connery will have a far easier time.
Briggs has no experience with server smashes but they are trying their best to catch up in weekly training sessions. Connery has good experience but they got stomped hard by Emerald showing a lack of strong coordination.
My bet is on Briggs. If you live on a Continent where everything tries to kill you and you play a game where everything tries to kill you, you have to be pretty hardcore :p
This Sunday Emerald vs Miller is coming up and I was voted as Force Commander for Miller in the probably hardest match of the whole season. Wish me luck

I just started playing this and have soooo mich fun :D too bad I dont have any friends to play this with, I would love to be able to play in a team with others and take part in coordinated attacks.

The first pick I can recommend would be Ohhh, led by drhous3. He's a nice guy and his outfit plays fairly competent, though nothing highly tactical. They'll have a public platoon up often, so you can get a taste of their playstyle before joining.
If you like nonsense humor, you can join LYF. They are decent players even though some of them can be really annoying and their taste of humor is questionable. Talk to GuardianAngel02. They should also have a public platoon up most of the time.
More tactical but a lot harder to get into are 252v, CONZ, XDT and WASP. I don't know their exact recruitment policies but they'll expect more of you than most new players can provide. For most of them you'll also need a microphone.
I would recommend FRMD at this point since they are the outfit I used to lead, but the new leadership already has their hands full taking over mine and Zukhovs legacy, so I'm not sure how they'll be able to bear the burden of teaching new players at the moment. You can talk to KatalinaStardriver if you like, they'll also have a public platoon up occasionally. You have to be over 18 and be willing to ruin your K/D more than usual though.
Don't join ORBS. Biggest waste of manpower I have ever seen.
Lastly, don't compare ServerSmash play to live play. Live play are ~350 headless players per faction per continent running around doing the wrong things all the time and 50 players per faction per continent actually trying to get things done. In ServerSmash every player is coordinated and handpicked and gameplay on that level is basically never seen on live.
So, tomorrow at 12:00 GMT the big 240 vs 240 vs 240 3-way smash. Cobalt won the ServerSmash tournament, briggs has the lag wizards defeating both Emerald and Connery and Miller might have lost every match but has shown the spirit to improve.
I know nothing about euroland, other than that Miller supposedly has lots of scary people, Cobalt has lots of technical issues, and the Japanese would rather invade Connery than play with aussies.
While it was fun to play (will upload first person view as QRF PL for Miller once I encoded the 2h video), a 3-way is just too random. I don't think it was skill deciding the outcome of this match but rather who the others decided to screw over.
