Mind you, she never asked for the gem, or even hinted at wanting it. She expressed her admiration for its beauty and magnificence – and that's it. She even hoped that it would be "as tasty as it is beautiful", implying that she's OK with Spike eating it. She may not have liked that decision, but she recognised that it was Spike's gem and therefore his call. She was rather eager to accept his offer, but that's not a huge character flaw. Perfect characters are boring, after all.
As for wearing it afterwards... that doesn't seem bitchy at all. If you give a girl jewelry, you generally want her to wear it. In fact, wearing it shows Spike that he didn't give away his birthday dinner for nothing: it shows that she's genuinely thankful for his gift.

For those who were having this conversation with me before the new episode stuffs, yeah, you could compare it to the uncanny valley feeling I suppose... Whereas for the ponies I find it downright ugly, even more than creepy.

Well, if I wanted to manipulate someone into offering some stuff, I would strongly express my love for it, but the last thing I would do is ask for it, especially if I KNOW the person has a crush on me (which is the case for Rarity, as we have a confirmation during their falling scene), because then it's obvious she will rush in to giving it to me. And she proved she knows how to manipulates males, that's why I find it difficult to believe she was completely genuine. At worse, she unconsciously asked for it... At worse :p About wearing the jewelry afterwards, I totally agree with you, it even warmed my heart to see her with it, it was the proof the gem was indeed special, and the best way to show sincere gratitude to Spike. Anyway...
