Nobody actually counts mining workers, you just look at them and get an idea. Maybe pros do with their first scouts, but after that you just go "huh, I'm over/under saturated."

People actuly count workers all the time. Its very relevant if you are doing anything >1base, where you can mentally just be aware of how much supply you have in non-scv units until specific cuts, but with FFE into any kind of timing, its very used. Camera hotkeys and boxing to check exact worker counts is pretty much an every-game thing, and very useful, because workers 1-16 on minerals add so much more income than 17-24, there is almost never a reason not to f1 box f2 box f3 box and re-assign workers around so you only have 2/3 on each gas, up to 16 on each set of minerals. You can make a difference of >10% economy by simple transfers and worker rallying in specific ways to avoid downtime or diminishing returns from saturation.
Not many people at all do all of that, its mainly an OCD and obsession over stupid shit thing that some have, but simple worker counting/boxing? That is really really common, and P/ZvT if you get into the base and see no barracks and do NOT count workers, you are in serious serious trouble. Counting scvs on minerals can tell you FOR CERTAIN that he cannot have started 2 proxy rax at a specific time, and without that information, you are playing completely blind, unawares if you have proxy 9-9 / 11-11 rax with massive worker cuts or if he went cc first somewhere without cutting workers at all
