Hi TL!
Today's recipe is Linguine and Clams. This classic dish is pretty simple. :D
INGREDIENTS
- salt
- pepper
- 4 cloves of garlic, minced
- parsley, chopped
- 1 teaspoon of olive oil
- 1/4 cup of grated parmesan cheese
- 2 cups of white wine
- 1/2 juice of a lemon
- 1/2 of an onion, minced
- 1 lb of linguine (whole wheat)
- 1 1/2 lbs of little neck clams (clean very thoroughly)
PROCEDURE Total prep time will take about 30 minutes. Total cook time will be about 20 minutes. This will make 4 servings.
Calories per serving: ~480 calories
- Set a pot of water to boil. When water reaches a boil, add in salt and pasta.
- Allow pasta to cook for approximately 8 minutes. While pasta cooks, prepare the rest of the ingredients.
- When pasta finishes cooking, remove from heat. Do not strain pasta until your clams have finished cooking.
- Set a skillet on high heat. Place your oil in the pan and allow it to heat.
- When skillet is hot, saute your minced garlic and minced onions. Season garlic and onions with salt and pepper.
- When onions become translucent, add in your white wine and clams. Make sure that your clams are thoroughly cleaned. Throw away any clams that have already been opened or any that have severe cracks in their shells. Live clams will have closed shells (they will open during cooking). Cover skillet with a lid and allow the clams to steam.
- Cook clams for about 7 minutes or until the shells begin to open. Remove from heat and add chopped parsley.
- When clams have completed cooking, temporarily remove the clams from the skillet. Add in your strained pasta and gently toss pasta through the sauce.
- Remove pasta and place on a plate. Top the pasta with cooked clams and cheese.
- OPTIONAL: Add fresh cracked pepper over the dish. Garnish with additional parsley.
- Eat!
And you're done :D

Great! I love linguine and I LOVEE clams.
Btw, is it okay to mix cheese with seafood? I've heard from several places (I think Food Network a few times or maybe somewhere else) that it shouldn't be done.

Yeah, I hear every now and then mixing cheese and seafood is basically forcing your stomach into suicide.
But I guess it's still ok... I mean, look at clam chowder soups...

Personally I like to take the clams out of the shells and then toss them into pasta.

Either a chardonnay or a sauvignon blanc will work. :D Typically, that's what I use for seafood dishes.
I'm not really an expert on wine, so if anyone else has suggestions, please post!

Haha, the name for this dish is "FTL: faster than linguine" :X Been playing FTL a lot.
Hmm, non-seafood... You could definitely try this with grilled chicken. :D White wine and chicken is usually a good pairing.

I've heard the same thing too, but the addition of cheese is very light on this dish, so it should be OK.
With that being said, there are a few shellfish dishes with cheese. Like baked razor clams with cheese. I remember watching an Anthony Bourdain: No Reservations episode where he visited Chile (I think?) and they served baked razor clams and cheese. There's also some seafood lasagnas out there too.
I think you just have to be careful with the amount of cheese you're putting in the recipe or you can just leave it out entirely. Still tastes good without cheese. :D

I always try to get the "healthier" alternative to the real stuff, so most of the ingredients in my blog are the low-fat, whole wheat, soy versions.

I feel I need to intervene here. Your recipe is quite reasonable by Italian standards but you don't let the pasta wait 10 freaking minutes until the sauce is over! I thought the goal was to eat pasta, not some glueish yellow wheat jelly.
Basic rule for essentially all pasta dishes, with very exceptions: the sauce has to be ready before or at the same time as the pasta itself. For cases where the sauce takes a long time to cook, typically what one would do is to cook the sauce before, then put the water to boil for pasta when one is relatively sure that there's not too much time left before sauce is ready. At the end, you quickly reheat the sauce together with the cooked pasta when you mix them up.

I actually just recently discovered I fucking love shrimp. I used to hate it up until maybe 2 years ago when I randomly had some and was like
....my god.....
what have I been missing out on!!
Ergo, try shrimp cause it's boss.

I have an issue with eating things that are invertebrates. Partly because of where they are at, partly because of what they look like, and only tangentially related to their consistency.
But many possibilities here... and yes, Faster Than Linguine is great as long as you make sure the ingredients are in the right rooms when they catch on fire.
