Hello!

I've been so productive this week that I've managed to write another food blog post. :'D

admittedly, the final picture isn't super food porn...I think this is:

Unless you don't like salmon.

Anyway, today's recipe is a simple salmon taco with mango salsa.
Very refreshing.

INGREDIENTS

FOR THE SALMON
  • salt
  • pepper
  • 1 teaspoon of dill
  • 1 teaspoon of garlic powder
  • 1 teaspoon of cumin
  • olive oil
  • juice of 1/2 of a lime
  • 1 lb of salmon fillets
  • 1/2 cup of spinach
  • 6 whole wheat tortillas


FOR THE SALSA
  • salt
  • pepper
  • juice of 1 lime
  • 1/3 cup cilantro
  • 1 red onion
  • 1 mango


PROCEDURE
  1. Dice your cilantro, onion and mango.
  2. Add in lime juice.
  3. Add salt and pepper.
  4. Combine the ingredients — add additional salt and pepper to taste.
  5. Set a skillet on high heat.
  6. Place a teaspoon of olive oil in the skillet.
  7. Season the salmon with salt, pepper, dill, garlic powder, and cumin.
  8. When the oil hot (just before it begins to smoke), place the salmon in the pan.
  9. Cook the salmon about 5-7 minutes on each side.
  10. Remove salmon and let cool for 1 minute.
  11. Warm tortillas by wrapping them in a damp paper towel and microwaving for about 10 seconds.
  12. Place spinach on the tortilla.
  13. Flake pieces of the salmon and place them on top of the spinach.
  14. Spoon mango salsa in the tortilla and wrap.
  15. Garnish with additional cilantro.

Ever tried white wine to cook the salmon with? It is very, very delicious with a unique flavor!

Going to try this later on this week. Never had Salmon tacos before lol

I will actually make this tonight if I can get my hands on some decent mango, as a celebratory dinner for landing a job :D

Sounds so wrong, there is nothing to give an edge to the dish. Salsa of sweet mango with the fatty fulness of the salmon. And then use it with microwaved tortillas, sorry but it sounds plain gross.

If you really don't like microwave, just microwave it to warm it up then throw it on the toaster/oven/pan to crisp it up

I'm all for chili, but unfortunately I cook for someone who is very sensitive to spices. So I typically leave out extra spice.

but adding chili to almost any dish will work! Just don't add too much otherwise you might overwhelm the dish.

Dill is an herb. It kind of has this lemon-y flavor.
You can find it dried or fresh at most grocery stores.

I think a container of dried dill will cost you $2 or $3. It's $1.99 at Trader Joe's.
Fresh dill is usually a bit cheaper. Personally, I stick with dried because it's a bit more cost effective for me.

Fresh herbs are always better, but if you don't plan on using the whole thing, it can be a bit wasteful.

I've never tried that combo before, but I do love raw salmon.
Maybe you can try either doing a salmon tartare like this:

I've never had the opportunity to cook salmon actually, nor do I use the mango at all in normal cooking... this recipe is amazing! I must try it, besides, I'm in the mood for some nice tacos.

Your cooking forces me, once again, to hit the store, kierpanda, and not once yet have I regretted it.

Hahaha T_T I'll probably burn my hand on camera. I'm not very good with videos, let alone video editing.

Unless someone wants to volunteer for that part, it's probably only going to be pictures for now. sorry!

Searing the salmon on high heat for 5-7 minutes on each side will produce way overcooked salmon. I suggest 3-5 minutes per side maximum.

A random trick from my grandma to never get dry salmon: After throwing it in the pan, do one side (ideally the one with skin) for the usual 4-5 minutes, then turn it around and turn off the heat completely. Add a lid on top of the pan if you have one. After another 4-5 minutes the salmon is done but thanks to the heat level steadily dropping it stays nice and juicy.

That.. mango salsa... sounds so... tasty.

Agreed. Whole wheat tortillas are probably one of the absolute worst food items ever created. Right next to whole wheat pasta.

Fish is one of the BEST looking things in the world when it's prepared well...

...which is why it sucks so much to be allergic. I hope this was yummy!
