Pork with Apricot Sauce and Cabbage Slaw
Ingredients
For Pork and Sauce
- Salt
- Pepper
- Olive Oil
- 1/2 Lemon
- 2 lbs of Pork Chops
- 1 teaspoon of Ginger
- 1 tablespoon of Soy Sauce
- 1 teaspoon of Crushed Garlic
- 1/2 cup of Dried Apricots
- 1-2 cups of Water
For Red Cabbage Slaw
- Salt
- Pepper
- Olive Oil
- 1 tablespoon of Dijon Mustard
- 1 tablespoon of Garlic
- 1/3 cup of Rice Vinegar
- 1/2 cup of shredded Carrots
- 1/2 cup of shredded Red Cabbage
- 1/2 cup of shredded Snap Peas or Snow Peas
- 1/2 juice of a Lemon
- chopped Chives
Procedure
- Wash your cabbage, carrots and peas.
- Cut pea into thin strips.
- Add a teaspoon of olive oil to a pan on high heat.
- Place cabbage, carrots and peas in a pan.
- Mix together the Dijon mustard, vinegar and garlic. This will be your sauce for the slaw.
- Pour the sauce over the slaw. Reduce heat to medium low. Let the slaw cook until soft (about 10minutes)
- Pour lemon juice and chives over the slaw.
- Chop up dried apricots.
- Place apricots in a hot pan.
- Add in ginger and soy sauce.
- Add in water slowly (every few minutes)
- Reduce heat to medium.
- Let sauce reduce and concentration
- Salt and pepper your pork.
- Add oil to a pan on high heat.
- When oil is hot, add in the pork.
- Let pork cook for 3-4 minutes on each side.
- Remove pork and place on plate.
- Add the slaw and spoon sauce over the pork.
