As italian I am really often disappointed by the way foreigners make pasta.
This is really strange because it is one of the easiest dish to cook..
Don't blame if you alredy know it but here is it the RIGHT way of making pasta.

Take your cooker and fill it with water;
Wait until water boils;
Put salt in the water as much as needed;
Wait until water boils;
put pasta;
wait the time written in the box. However you want to check it time by time to make sure pasta arrives to the right cooking time.
Drain the cooker.
Add sauce

why do you wait til water boils before putting pasta in? I just put it in with the water at the start, works perfect everytime.

and adding salt is MAJOR no-no.. do you know how much sodium is already in most pasta sauces as it is?? More salt is overboard.

Because you get a consistent temperature (also higher) when the water is at boil, which is better for the texture of the pasta. Do you ever pre-heat the oven, it's the exact same logic.

Do you know how many calories are in fries? Why do you eat it with a burger and a soda? Because it tastes better.

Pasta without salt taste bland and disgusting.

I don't make pasta like this.

I am italian.

You can provide a much stronger flavor if you bed the pasta, or cook the pasta in a sauce with slightly extra water just before the al dente phase. You can also fry pasta once its almost done with eggs and a thick meat sauce, which is also good. You can also cook pasta in a broth to create a nice soup.

The main difference between italian and foreigner pasta cooking is that foreigners cook well past al dente and lose the texture and resistance of the pasta, which makes for a much less satisfying bite. The sauces used are also inferior; homemade sauce is light years away from canned or bottled sauce.

Also remember: Pasta is not spaghettini. Pasta is pasta. I haven't even touched most pastas.
The number you have dialed is out of porkchops.

Alright Mr. Italian, please tell me the following: Is it acceptable to put the sauce into the pot with the drained pasta and stir it up in there? Or is the sauce only supposed to go on top of the pasta on the plate as one nice blob?

But he's Italian so he must know the proper way to make it!

Blob is nub technique.

Put a decent amount in the pot if you use the OP technique to heat up the sauce to the same temperature as the pasta, but don't use all the sauce. Place the remainder in something which can pour easily. The pasta should be lightly covered, and the remaining sauce can be used to top people up as needed.

Cheese, by contrast, is normally added afterwards unless the sauce is a cheese based one, like the standard butter/parmigiano.
The number you have dialed is out of porkchops.

and/or or ketchup. You'd think an American would know that. Ketchup is probably more common.

I try not to eat fries or burgers.. and esp dont drink Soda.

My point is, pasta sauce already has like, what, 600 mg of sodium per cup?? why would you add another huge chunk of salt to the water itself?? thats going more overboard than it already is (theres loads of salt in it already)

It's important to stir the pasta when it gets into the water so that it doesn't stick together. Pretty important detail to leave out of such a simple dish to make
