Alternative twist: time runs out, Universe 7 wins because Freeza and Goku are both still in the arena.

Alternative alternative twist: Goku just wins and we get the run of the mill Goku ending.

Alternative alternative alternative twist: Jiren and Goku are both knocked out, Freeza wins. He then wishes to be more powerful than Zen-Oh and rules over the multiverse.

Fun fact: this has not actually happened yet in the entirety of DBS. The closest we got was his fight with Hit. Every other major villain, Goku was either unable to beat them, or someone else beat them in his stead.
As an aside, I'm thinking the time out with Frieza still on the board scenario is looking pretty likely. They've made no mention of the fact that he's still in play, or that he hasn't been knocked out. This is feeling like a Chekhov's Gun kinda thing.

Which just makes it that much more of a twist for this arc!

This whole reacts faster is silly. Even in very early dragonball power was everything. The Teenage Goku fighting Tien was o fast that tien could even see him. It doesn't matter how good your reactions are if you can't even compete in speed and power with your oponent.

After the ending to zamasu arc, I've given up on predicting arc endings. There's just no way to do it.

Reactions are a test of speed though. Power is just how much each hit counts for. Power means nothing if you can't hit your opponent, aka Vegeta/Trunks vs Cell.
UI basically gives the user access to a reaction speed that's faster than you can even contemplate. Hasn't really been explained how he's hurting Jiren though, does UI unlock a hidden energy source in you as well that's powering the attacks? It must be to inflict damage on Jiren, I'm assuming we'll see more of a explanation during this last fight as he's probably going to master UI.

We were told earlier that there are two 'halves' of UI. The defensive and the offensive, I think the last scene+the preview extra shiny glow was to indicate it looks like Goku picked up the offensive side too now.
We also were told/shown Jiren can get hurt if he doesn't see a powerful blow coming, presumably UI allows Goku (at least until Jiren adjusts) to attack faster than Jiren can do his "im so buff" standing there blocks.

Yeah but we've got 2 more minutes left. I think Jiren has some sort of mini transformation or at least "goes all out". Goku was running circles around Jiren and I can't imagine that is just how it ends.

2 MINUTES! THAT'S ONLY LIKE 10 EPISODES!! I'd laugh really hard if the series just ended with Jiren getting jobbed. It would be the perfect ending to Super.

If jiren is jobbed and Goku basically reaches some kinda angel kind of power through UI, I think after the movie, a new series like GT where weaker characters do stuff with other universes or something. Goku basically just gets super OP and then retired lol.

Plotter twister: Goku loses but in the meantime Freeza managed to sneak up on the Zenos and kill both of them while all eyes were on the fight, leaving no one to actually do the universe erasing.

I think Japan's unemployment rate will tick up again after the last episode's plot twist.

Only if our universe is going to be erased.
