Tank/Viking isn't a build order, it's a unit composition that is quite frankly terrible until you get ALOT. The main problem with it is obviously the immobillity, and tanks cede all map control to marauders, since in the earlygame marauders absolutely demolish tanks forcing the tank/viking player to turtle up at his natural.
Going for a mobility based army that transitions wayyy later into tank/viking seems to work out better. Then whoever has more gas will win the game with a higher viking count which allows for battle cruiser production.
