If you want infestors making lings instead of roaches gives you more gas.
The melee upgrades and units also played a large part in those battles, lings ruin stalkers cost for cost (and don't do too badly against poorly defended colossi).
I would have liked to see a muta transition instead of the 9 ultras. His opponent was down to 5 stalkers and was gearing up to deal with ling ultra (so zealot immortal) with no sign of templar or stargate yet. 20 mutas come out faster than the ultras and could have annihilated the mineral lines completely sealing the deal. It's just a thought mind you, I happen to like a hard muta transition especially when you have forced him out of stalkers. 20 mutas can also snipe buildings (my favorite is to transition hard and the first thing I hit with the mutas is the cyber. Gives a couple minutes of freely killing everything.

In this situation, if you ever feel the protoss might be able to defend, I think getting mutas is ok as a Protoss would not go from Zealot Immortal DT to Stalker HT very quickly at all.

I think you played well the first game, almost killing him with that first push. Second game is as you described, rock/paper/scissor... MC with the huge advantage of 3 nexi, gateway heavy...

If it's that late into the game on such a large map, maybe you should nydus for faster reinforcements and bring a few queens for transfusing on the ultras (or have I been watching spanishiwa too much )

Was also a big shame, wasn't it just 1 sentry you missed with the EMP?(think it was 1 FF from a EMP'ed sentry and 2 from one you missed) if you had hit all, I think you would've been in a pretty decent position.
