Alright, so I take my 18 gas at around 3:30, Vortix takes double ( or quad ) gas at 6:00. My zergling speed will be done way in time for any large bio push and one base hellion play ( around 7 minutes ), while any 6 queen opening has to defend with queens and slowlings. Any runby against a slow ling zerg is nigh game ending, while against any zerg that has speed out it is nigh on suicidal unless the zerg completely screws up. I will admit that the later gas is obviously more economical ( by about 300 or so minerals ) but I prefer having any bio-push turned into a complete all in over having it get free reign over my third. The difference is that you can delay your 3rd and 4th gas as well, giving you more minerals during that time because you can still support getting a +1 upgrade with the single gas while not delaying your lair all that much.

I'm pretty sure you either have to delay your Evolution Chambers for a Roach Warren if you want to be able to consistently defend your 7:00 3rd with the 4 Queen build, or turtle up into a more economical and faster 2 base Mutalisk with a 6:00 Macro Hatch and earlier Lair. Trying to defend your 7:00 3rd with just 2 Queens and Speedlings is too dangerous, especially if they're smart enough to bring 1 Marauder with the 1st Banshee and 2 more Marauders with the 2nd Banshee and continue to build Marauders and Hellions to reinforce while the Viking kills your Overlords and clears his 3rd from creep.
I take my second gas when I want to start my lair, which tends to be around 6 minutes give or take. I take the lair and another +1 upgrade right after, allowing me to delay that second evolution chamber. I can also delay my roach warren because no hellions are going to go run in against a 4 queen wall and they certainly won't kill off the third. You just bring all four queens if you ever have to defend against a large push and flood in with speedlings if they attack the third. Vortix's build does not have speedlings out at this time, so a defense with his build is much more difficult.
It could definitely be the difference in opponents, being aruond 2000 MMR myself. But really, I haven't had real difficulty against Banshee/hellion harass on my third as terrifying and game-ending as you describe it.
