Vs zerg i always mech, and once the late game comes i generally just go vikings blindly, but that seems to be my downfall because i end up fighting ultras. If im playing vs ultras what would be the proper response as a mech player. Should i continue banshee production? Start going into ravens, or just make more tanks?
So, what/how do i respond to ultralisks?

You can never have too many scans/MULEs. And you can never have too few SCVs in the lategame. Well you can, but as long as you keep 10-20 SCV's you'll be fine if you have 10+ orbitals.
PFs are really good too, they're cost efficient against most stuff

Watching Lucifron playing at WCS, I noticed that he will always siege his tanks against ultras/lings (even if there isn't many lings), even if he got caught out of position. It seems that there should be situations where you shouldn't siege against ultras. Is there a general rule of when to siege up and when to not siege up?

IF you have good micro and can shift click the ultras reliable I'd highly recommend NOT sieging in general against ultras. The single target damage is far more efficient and good focus fire on the "front" ultras is important.
In general though, if you are caught unsieged don't try to siege up, your tanks will be dead before they finish the animation. Ideal would probably be half sieged to focus fire infestors and splash zerglings and half unsieged to focus fire on Ultras, but that is a theorycrafting for me, never managed it in practice In fact I am happy enough if i can focus the Ultras properly without messing up my shift chain.

Situational since it depends on your opponent's army composition. In direct fights, unsieged Tanks are better than sieged ones against Ultralisks, but you might want to use Siege Mode anyway to kill Infestors (and/or Zerglings if there are many of them and you don't have enough Hellions).

yeah, but you always have a couple of tanks to deal with infestors and banelings

diamond league by the way. Another thing you can do is throw down 5-6 barracks before starting your factory, and just run up him ramp and kill him. This is pretty allin-ish though so you might not like it.

Storm forces Protoss into an extremely defensive position. Drop play will be good, make sure to burn enough energy to avoid 1-feedback-kills on medivacs.
As mentioned above you can deny his third. Just don't push, but you can pressure. Storm dodge like Taeja C:

Also remember - if hes not going collosi, spam medevacs like mad.
Both HT and Ghost tech are very expensive off two base, so unless he's going for some timing attack it should be ok for you to sit back and expand. If hes going heavy on zealot - HT and neglecting on drop defense it wouldnt be bad to look into doing some minor droppings while you expand,

If you do no damage early on, you should not trade units with an attack at 10:00-12:00. This attack should be used to try to deny the 3rd while you a) max out very quickly on 5rax or b) establish a 3rd and max out. During 10:00-16:00 you can be aggressive, but you can't really afford to start trading until you're close to maxed out.
I did the standard 10:00 pressure for a long time and didn't understand it until I started playing protoss. All you need to do is keep protoss on their toes and keep them from being able to sit back, relax, and macro on 3 bases. But DONT trade until you're nearly maxed.
In addition, you also generally want to be going marauder heavy in the midgame. The tankier marauders can take storms and colossus blasts a little easier while splitting. In addition, you're setting yourself up for a ghost transition by making a lot of techlab barracks. (Should be like 3 TL/2 reactors on 5rax).

The generally accepted way to play mech nowadays is to spend the midgame building up a critical mass of thors while using turrets, a small number of tanks, and chokes to defend. Once you have 10+ thors and some hellions, you're pretty much fine against anything besides BLs. If you have this critical mass of thors you can blindly transition into a handful of vikings to deal with broods while also getting the tech up to start raven production. I would say that banshees are great against ultras too, but it's better to spend 6 supply in a thor than banshees after about 5-6 banshees. In addition, you free up your techlab starports to start raven production.

I personally don't like tabbing through things, but that's a personal preference. As a result, I just keep CC on 4, barracks on 5, factory on 6, and SP on 7 and have adjusted some hotkeys to better fit my hand. However, I think that if you would rather tab, you would naturally want to rekey tab so it feels more natural and efficient.
I'm not sure if either method is more efficient or actually requires less APM, but I think it ends up just being a preference thing. Another thing to take into consideration is perhaps the importance of being able to use more hotkeys for army supply.

also another reason to have about 5 or 6 banshees to snipe infestors, also if split well energy required to fungal banshees is energy not spent on infested terrans neural etc. then when you have enough banshees stockpiling ravens is a good idea because you need them to build up their energy. whilst it is very tempting to suicide your banshees to do damage keeping them alive is really really important in tvz mech, if you dont lose a single banshee you will have at least 6 by the time ultras can come out, it lets you start producing your first ravens much earlier without sacrificing the large dps with mobility against roaches or ultras
and as for siege versus unsiege usually its not going to be pure ultra, itll be ultra ling so unless you are very late on your siege its obviously ideal to be sieged initially.
also playing mech i feel scanning is usually more important than mules so I don't think there is ever a reason to blindly build vikings.
