I want to do some high sec as I haven't been playing long and was wondering about the routes I could take. Should I bump around with the Probe and scan down all the places, bookmark and then return with a combat ship? Is there a better option for a Minmatar, like a decent all in one vessel? Can I just fail scan my way into these places with an Arty Thrasher and blow the fuck out of everything then hack/salvage?

Hi sec exploration is pretty aggressive. Chances are someone else will run your site before you get back. I would recommend dual boxing if possible; otherwise a thrasher with a probe launcher will work (just poorly). Start training a probing alt on another account asap. If you don't end up using it after the 21/51 days, no loss.
If you're going to stick with one account, I would go for a faction cruiser with a probe launcher. (Even with two account, still go faction.) This will allow you to get into 3/10 DED complexes, and there is pretty much nothing in hisec you can't handle with a faction cruiser.
Also, lowsec will net you a lot more, and the majority of the sites aren't too much more difficult. Cruisers are the biggest thing you will have to kill outside of 4-6/10 DEDs, and the sites are worth a lot more.

If you really want to know a lot about it, ask Viceorvirtue, hes the exploration man.
If not, from the few highsec explo I have done, Ive found radar sites to be the only viable ones money wise. High sec radar sites are very easy, get a probing ship that has a drone bay, slap an mwd on it, once youve actually found the site all you have to do is kite the rats and kill them with drones, extremely easy. As far as finding the radar site, the biggest pain at first is to find lower then 0.8 systems where theres not much people going often, once you have found a couple though just bookmark them and what you will want to do is basically run through this set of systems once a day and scan everything and just do the radars.
Pretty decent isk if you love probing
As far as combat sites go in highsec its pretty much a waste of time I think.
First of all dont listen to ghost, he happens to be a complete idiot. If you have good drone skills its possible to run radars and mag sites with a probe by kiting the rats and letting your drones kill them. I perfer an imicus for this because it has 3 drones and the ability to fit a tank (200mm plate and small armor rep) but a probe can do just fine with 2 drones and an mwd.
For hisec combat sites I suggest getting a droneboat such as a vexor or arbitrator. The problem however is without a ship with a probing bonus you actually need decent probing skills and even then its still going to take longer than using something like a probe. You dont need to get an alt at all, just realize that for the most part you will be beaten on combat sites by people in tengus so radar sites become more profitable. Mag sites were buffed lately but not nearly enough to make them worth doing in hisec sadly. As far as radars go, the best radar loot will be found in minmatar space against angel rats, common drops range from 8-14mil.
Eventually youll want to go lowsec once you have a drake so you can run the 5/10s and 6/10s easily. Lowsec mags and radars are also very much worth running so keep that in mind as well. Swapping ships to run combat sites in lowsec is much easier because almost nobody actually does exploration there compared to hisec. Your end goal will eventually be to get a tengu. A proper pvp fit can easily solo anything in lowsec as well as nearly all nullsec sites without any problems, and be able to kill anyone who gets in your way.
A probing alt really isnt needed until you have a tengu, and even then its more beneficial to just have that as a skirmish link alt with a probe launcher.
