If the graphics annoy you just don’t watch that particular event, seems a bit OTT to unsub from someone entirely especially if they don’t have a say in using/not using Reforged for certain tournies

As HU you can go rifle/caster against anything practically. Against T3 NE you'll probably need to add some shrapnel mortars and a couple of breakers (to steal rejuv). If going MK you'll probably want knights with a couple of breakers and tanks to harass NE base while your main army is fighting. Going knight/gryph is a recipe for disaster against NE since your units are super expensive and gryphs don't do squat against dryads. Also, without casters you don't have any sustain while NE has access to rejuv and half his army being practically immune to everything you have (knights are bad vs dryads, gryphons are useless against them and your best ability doesn't work on them). You'd probably be better going knight/mortar with some gyros to stave off possible chimera transition.

It's easier to go with AM/MK since then you can include casters and have this sweet sweet inner fire rifles (who can transition into sweet sweet inner fire knights if there are too many giants). In any case, you'll need mortar vs NE and probably breakers or priests to deal with rejuv and roar, otherwise you'll just get rekt.
