Fighting games community originated from people competing each other at arcades (outside). Tournaments in the early 1990s are held only from arcades store until later versions of the game are released on console, hence most people from the community are more "street", unlike SC.
I was at MLG Anaheim sitting on the front row of SC2 twice now, honestly I was disapointed.

Do MvC3, KoFXIII, or SF4 have good, low-latency online possibilities on EU, and are they more commonly played on PS3 or XBox360?
Also, stick recommendations?

Dno about that, been to Assembly 2011 and many fighting game tournaments, Assembly was super mild and honestly was so boring I didn't ever want to go again, the fighting game tournaments were always chill and everyone joked around and the atmosphere was really nice, people also gave advice always and everyone did their best to improve and help others improve

And it started in arcades. Where you were right there face to face with the guy. Trash talking, shit talking, etc. Friends cheering for their friends, etc. Getting hype is just part of it all.
In SC2 the demographic is much more shy, reserved, and quiet. Also, a lot more emphasis on manners and respect for one another.

I guess what comes closest in SC2 is some sick micro, but that's very very rarely game deciding! THe thing about SC2 is that unlike BW micro matters a lot less, there's almost no way a smaller army can beat a larger one with sick micro whereas it's more possible in BW.

I think in most of the world XBOX360 is the go to for fighting games. As far as sticks, can't really go wrong with a MadCatz Tournament Edition Stick.
EDIT: The problem is some tournaments will use PS3 so if you're getting competitive or want to go competitive you might need to get 2 sticks, and maybe even 2 systems and 2 copies of the game.
