Definitely the Shenmue Series! It was the best series on the Dreamcast and I loved it.
It's a pity that Sega couldn't continue the series. I would have bought the whole 10 games :D

Baldur's Gate and nothing else comes close - maybe with the exception of Fallout (1 + 2).
Deux Ex 1 was pretty fantastic, too.

As for my childhood; The Amiga 500+ days: The Secret of the Monkey Island (I was 7 at the time and began learning English on my own because I really wanted to beat the game) and Cannon Fodder.

2) Street Fighter/ vs. Series (3S/mvc2 personal fav.)
3) Resident Evil series (4)
4) SC1/BW
5) DMC series (although they probably get the title for most inconsistent series. 3's da best btw :p)

edit: oh how could i forget planescape, D2LOD, and demon's souls. so many wasted hours in those three games

Earthbound (SNES)
Metal Gear Solid series (PS1-PS3) (I haven't played Metal Gear 1+2, couldn't comment, but the Solid series is amazing)
Defense of the Ancients (Warcraft 3:TFT/PC)
Resident Evil 4 (Gamecube) (I'm not a fan of 2-3 OR 5, so I'm not really into the series)
Pokémon core series (GB-DS) (My Pokédex is over 400. I once had a team of 6 legit Mewtwos - and had 3 different colours, pink, purple, blue)
Suikoden Series (PS1-PS2) (With the exception of 4, an amazing series. 4 had a great storyline, but the play experience was horrible)

That list of games I could play forever. People would never have to release another video game of those ones existed, in my opinion.

Civilization (up until #5 which ruined it for me).
Settlers (when they were still cool, before they started turning them into some sort of RTS).
Virtua Fighter (best fighting game ever).
Fallout (1 & 2 only).
GTA (before it was 3D).
Quake.
Unreal Tournament.
Rainbow Six.

Stuff like that...

Lot's of great games, but the 2 best series are for me Pokemon and Disgaea. 2 game series who keep on improving, slowly but steadily (and they started on an extremely high level)

Legend of Zelda - Enough can't be said about this series.

Final Fantasy - Loved the series up to 10, the new ones don't grow on me.

Uncharted - Naughty Dog outdid themselves with this series, the second game was a blast to play.

Starcraft - Best RTS period

Tekken/Street Fighter/Soul Calibur - Grew up with these fighting games forever, and they are still going strong.

Grand Theft Auto series - Great games.

Thats all I can think of right now.
