You can check this post from a while ago. This details all the official comics that Zun had a hand in. There's a few other works by Zun that I didn't list because they weren't comics. Those include more written stuff (like daily-journal style stuff, or newspaper reports), and sometimes includes a short comic written by Zun but drawn by other popular doujin artists.
For unofficial comics by doujin artists, unless you can understand moonrunes (assuming most of us can't), you'll have to wait for releases by scanlators. Thankfully, there are lots of doujinshis already translated, so if you're getting into it now, you'll not feel any shortage at all. There's also plenty of touhou scanlators working hard on supplying us leeches with new touhou doujin content every now and then :D (coughs) If you're not careful, you can spend a long time just DLing and reading many different doujinshi scanlations.
The first link is from the wiki itself, which details all the different circles and their releases. I don't think all their dl links work, especially older releases, but you can refer to the wiki to look up specific circles to see what other works they released in the past. This link is more useful if you're just getting into reading doujinshis and learning about different circles.
The second link is the the portal for new scanlation releases, as well as an archive for old releases. Their archive is in the form of a torrent, and there's always plenty of people seeding, so you can be sure to find all the old releases easily this way. You'll find yourself using this site more than the wiki if you're just waiting for new releases
Between these two sites, there is a lot of good content, even if you're picky about your touhou fanon and only read certain stuff (eg maybe you like sakuya and youmu stuff, but hate reisin and youmu stuff, like me), but if you ask for some recommendations and have some idea of what you're looking for, I can probably suggest something.
Finally, I recommend using a good image viewer if you're going to do any of this. I use FastStone Image Viewer, which is quite easy to use and set-up. Most importantly, it allows you to set the full screen view to by default view an image's actual size or auto-fitted to your screen width. This means you don't have to resize every single image every time you flip a page.
For fan-art and webcomics, the easiest way is danbooru. Anyone who has used it will know it is an extremely NSFW site, infested with NSFW ads, and NSFW images. However, with careful use of adblocker and the pool system, you can avoid maybe 98% of the filth on the site. Sometimes, you'll unknowingly click into a pool filled with NSFW stuff or worse, or you look up an artist's other works, and unsurprisingly, he or she also draws a lot of porn.
The advantage of pools is it keeps related images (like webcomics) connected together, and you can navigate to the next or previous image in the same pool at the top of the page.
Of course, I have to make sure every one knows, since last time, a bunch of people missed this. Users can add translation notes over top of images, and there are some translators (a few who also work on doujinshi scanlators in fact) who will diligently add translation notes to the more popular pools of images (usually webcomics). If you see a see-through square over any text on the image, hover your mouse over it to read the translated note. Since this translation system is user-driven, don't expect every image/comic to be translated, as some images/pools do get ignored or missed. Also, there are some users with quite poor translation skills try to do a bit too much, but usually those get fixed after a while. Basically, read your translations like you read wikipedia.

Okay. So what is Touhou? The gameplay is cool and if you're not into bullet hells it also gets boring after a while. The art is terrible but fans draw awesome pictures which is why the characters are likable. Let's not talk about the plot. Only the music is then left and I believe ZUN got that right. Of course people remix this too as people draw fanmade pictures and mangas but this is actually good in it's original form as well. My conclusion: Touhou = music.

personally I think what makes Touhou so great is how it provides a very, very basic general plot and setting for the story. At the same time, ZUN puts no restrictions on how far fans can take the characters, which is very unusual, especially for a copyright maze like Japan. So for the wide variety of interpretation that one can take on every single character and every detail, produces an almost infinite maze of variation. This is why things like the relatively simple Apparitions Stalk the Night can be morphed into virtually anything, and why its not just one man deciding how the series goes, but rather the entire fandom influences the man. Take Cirno for example. People thought she was stupid because of Icicle Fall, Easy. ZUN designates her as a 9. Shit hits the fan.

Haha yeah, he does indeed put a lot of thought into what he does. I think a problem with lacking quality in for example art is because he's a jack of all trades.
