Well, actually we just know he lost his "visable" powers. Things like spiritual awareness and reiatsu were gone, but we don't know how much of that was Zangetsu Bach hiding stuff from him after going through such a huge transformation, just like we don't know how close his old zanpakutou will be related to his real one.

he also lost his quincy powers and almost died as a result why not teach him Quincy holy form instead?

As i've just finally read up on the whole manga - it's been slow at work :D - one thing is strange to me.
And yes, you're gonna laugh at this question, but:
I'm reading the manga through the site mangareader, is the manga always just black/white? Or is it just the site?

Color pages is considered 'special' in manga, as it's much more time consuming and challenging. Usually just color opening spreads and such where you'll see that. Some korean mangwa goes color, though, but it's really rare for full color chapters in japanese manga (though I'm sure there are exceptions, just none that I read or know about).
In short, no there's nothing wrong with your eyes nor do the hosting sites make everything black and white.

if anything Zangetsu supressing his power would make it easier to steal since Bach explained it as simply a power struggle

Bleach is more of an accident like this:
Two cars crash into each other, there's a huge fucking explosion but nobody gets seriously harmed. So hey, it looked cool! Then another car crashes into those two and you're like "wtf, how did we not see that car coming?". The only one who dies is the driver of the third car. Then a bus crashes into the pile of cars and you're like "oh come on, it's getting ridiculous...", still only very few casualties but more and more explosions. Then a derailed train comes along and everybody is blinded by the massive explosion that somehow AGAIN manages not to kill anyone. Then suddenly someone steps out of the train and shouts "There's an airplane inside your car!"
And then there actually is an airplane inside the car and everything explodes again. Then everybody turns into a butterfly.

That's something I've been wondering as well. Like I said earlier though, the only people that have any insight to Ichigo's power/zanpakuto would be his dad, Urahara, and sword smith guy (and Ichigo's inner people). There's a possibility there were a lot of lies going around. I would like an explanation in the future at some time, and we'll probably get one.

Well he knew about it but it has never been said he used it, its quite possible that both shinigami and quincy have that kind of "final form".
