in good old us of a, waiters and waitresses are usually not required to be paid minimum wage.
If you don't make minimum wage counting tips then the restaurant is required to make up the difference though.
the problem is that many tips in cash are not properly recorded in books, only those on card are recorded hence waiters/waitresses may be underpaid
also this law only applies to certain states. in ca for example you're supposed to pay them minimum wage no matter what, and in sf the min wage is like $11 + tips
A curious thing is that female waiters seem to be a minority by a pretty good margin over here, while at least from what I hear female waiters are a majority on the US. Makes you wonder if thats just because of tipping.

That's a good point, I hadn't thought about the cash part. Also had no idea that there were states that didn't follow that law, I had just assumed that it was a nation-wide thing. Although cost of living in CA can be so high that I guess it's good that you're required to pay minimum wage regardless.
