I see terran players using different amount of SCVs to destroy an assimilator, warped on terran base gas location. Depends if Marines help too. Depends how fast you want your factory versus how long can you survive with a bunker expand.

Actually the idiot AI gives different answers every single time. That is why i am asking here. There more SCVs you pull, the more damage is done instantly to your economy, but the faster the assimilator is destroyed means you catch up to that money loss faster too. The less SCVs you pull, the more stable income you have initially, but due to long assimilator disintegration time, your total amount of cash lost might be even bigger in the end? I don't know.
Does anyone have a statistic table for total amount of money lost when pulling different amounts of SCVs (1 from 6 let's say)

i dont know but easiest is probably going single player with PvT, all cheats on, MC a scv, build a cc and 9-10 scv. turn cheats off and test it

1) mine normally and when the assimilator finishes box ur SCVs to see how many u have, leave like ~9 on mins (so u have 1 worker per mineral patch) and all the extra SCVs (coming out of cc) + marines attack assimilator
2) another way is to not attack the gas with SCVs at first, u only attack it with rines, start ur nat cc, when nat cc starts u bring ur rines to ur expo to protect it vs zeals and finish the gas with ur scvs, bunk @ nat asap, this isnt as popular cus ur playing blind vs proxy gate zeal pressure, if theres no proxy gate zeal pressure this is good but if there is option 1 is better, depends on map/how well u can scout around ur base for proxy gate etc. (if u scout proxy gate after gas steal u could open 2 rax rine into exp also, in this situation u dont pull scvs to kill the assimilator)
option 1 is standard response on 3p or 4p map gas steal (more rare), option 2 is better on 2p map cus ur scv scout is gonna show u if a zeal is coming or not (if he made gate in his main, u can skip bunk if theres no zeal), many times on 2p map P will gas steal u into nexus first
many situations T will use option 1 on 2p map too tho, when ur refinery finishes u can decide to leave 1 on gas and cc then fact, mining with 3 on gas and going into fact before cc is bad vs gas steal > nexus, u want fast cc vs fast nexus and fact into cc vs zeal pressure into gas/core (slow nexus build)
so if u want a solid/more versatile opening just do option 1 and based on scouting info decide if u wanna leave 1 on gas and cc then fact or u can do 3 on gas then fact > cc depending on p opener, for example vs proxy gate zeal or 1 base core then nexus

Watch what Light/Flash does and copy that.
If it's about maximizing minerals income and killing gas my intuition says: keep 8 SCVs on minerals and use the rest to right click spam on the assimilator. SCVs coming out the CC go to mine minerals because they pop out the CC way closer to the minerals than the gas, this should give you 9 on 9 mineral fields very quickly. I wouldn't use more than 4-5 SCVs because pathing easily is a bitch.
Light literally fought gas steal just now. (12:12 CET / 20:12 KST) using 1-2 scvs and 2 marines while having 12+ on minerals. https://play.sooplive.com/scv6256/292711257
