Hey TL!

It's time for another recipe! In this edition of food porn, we're taking on the classic dessert dish, crème brûlée!

As always, all the images and text are taken directly from my blog (eatgamelive.com). So please, ignore the silly names. :D

Prep Time: 30min
Cook time: 45min
Serves: ~6 people (just makes 6 creme brulees, they're pretty smallish though)

INGREDIENTS
  • 1 cup (~226 grams) of sugar
  • 1 table spoon of vanilla extract (real vanilla is better, but it is fairly pricey)
  • 3 1/2 cups (~828 ml) of heavy cream
  • 6 egg yolks


TOOLS
6 small ramekins
1 butane torch (if you don’t want to go out and buy a torch, you can try burning the sugar by placing them under a broiler)


PROCEDURE
  1. Pre-heat your oven to 325°F (~163°C).
  2. Separate your egg yolks. You can do this by cracking open an egg and slowly passing the yolk from shell to shell over a small bowl. Place all separated yolks in a separate bowl.
  3. Once you’ve separated all of the yolks, add 1/2 cup of your sugar into the eggs.
  4. Beat until the mixture becomes thick.

  5. Place a saucepan on medium heat.
  6. Add your cream to the pan.
  7. Add your vanilla extract to the cream.
  8. Allow the cream to get hot, but not hot enough to boil.
  9. Remove cream from heat and slowly add the cream to your egg mixture.Try using a ladle to slowly add the cream to the egg mixture.
  10. Stir your egg mixture as you add the cream.


  11. Pour cream and egg mixture into ramekins.
  12. Place the ramekins in a baking dish.
  13. Pour water into the baking dish. There should be enough water to cover the ramekins more than half way.
  14. Place baking dish in the oven.
  15. Let the crème brûlée bake for about 45 minutes.
  16. Remove crème brûlée from the oven and let cool on the counter for about 30 minutes.
  17. Place crème brûlée in the refrigerator for about an hour and a half.
  18. When ready to serve, distribute the remaining 1/2 cup of sugar among the ramekins.
  19. Use a torch to burn the sugar until it caramelizes.

That's the real recipe ! Alas, too many restaurants use whole eggs or add some milk instead of using only heavy cream.

Creme Brulee is just, so fkn good. I mean i swear it's a drug in it, so nice and addictive, gosh. Just looking at them makes me so hungry

Creme brulee OP!
I once had creme brulee with extra caramel on top of its already hardened sugar crust. It was absolutely out of this world!

You can try putting the creme brulee under a broiler (some ovens have a broiler function). It'll take a bit longer, though.

I used the same trick to make a Terran stencil for creme brulee:

as a note to your procedure.

Saucepan of vanilla and creme should be going before you mix the sugar and eggs. If you let the eggs sit too long or whisk to much the sugar will cook them.

You should also emphasize that when pouring water into the pan the ramekins sit in to be insanely careful not to accidently splash water into the custard or it won't cook properly. (that reason is why almost universally in kitchens ramekins are put in the pan after water is added).

Also, for best tasting creme brulee letting it stay in the fridge for closer to 12-16 hours gives a better taste.

Good way to use the "unwanted" egg yolks nowadays I guess (not that it makes it any healthier but at least it's moving it to something decadent)

I heard a study recently saying egg yolk has a similar effect on the arteries [hardening] as smoking does.

There is a lot of variance in them; you can add flavorings to the custard to spice it up a bit (such as nougat, praline or hazelnut) which imo makes it 6x nicer. If the sugar is burned it becomes bitter which ruins the whole thing, so that can make a big difference.

There was a fad for making the custardy bit lavender flavour for a while but luckily it's gone out of fashion.
