edit : problem is that even vanilla skyrim is too small i explored everything there is so fast =( well vanilla oblivion was a bugfest and unplayable to some degree so... edit 2 : thing is when iwas teenager i found every single witch shrine in daggerfall by myself so i have quite high standards with TES series =-

If you haven't already, getting your smithing and alchemy to level 100 will make your enchanting even more awesome than it already is.

Yeah, I think I saw something about making a fortify enchanting potion, then enchant a ring (or whatever) with a fortify alchemy, create new stronger enchantment potion and so on. Explore, collect artifacts, max out all your skills, roll a new character, personal challenges, gather shouts, decorate your houses with epic loots, pick up a secondary attack method, ect, ect...
Personally I get the most enjoyment out of exploring dungeons and small towns and discovering side quests and storylines there.
The faction quest lines were mostly disappointing, especially Dark Brotherhood (When did they stop being assassins and become common murderers?), but here's to hoping they acknowledge that in their post mortem and some up with some amazing faction quests in an expansion.
Morrowind had an immense exploration and discovery aspect to it that the more recent Elder Scrolls games lack, and I blame it on the instant travel dumbing down and gouging the downtime between quest objectives. For my next playthrough I'm going to challenge myself to never use map walking unless absolutely necessary. Personal challenges like that always kept me interested in the Elder Scrolls games long after I've discovered most of what there is to discover, maybe try out some things for yourself?

Uninstall it, that's what I did. Well, okay, I made two characters without min-maxing and it turns out they were both super overpowered, so I stopped playing.
Not much merrit in a game that is only difficult if you avoid 90% of the skills and talents. I like to think of it as an "exploration simulator".

Bethesda announced full software release for modding in January 2012. The tools will be the same they had to create the game and will include all files. Also, they announced Steam Engine will fully be able to receive mods made from the tool and will allow steam players to fully mod their game through Valve content (free) created by other players.

I didn't see anyone answer your question but one of your cons referring to recharging weapons: when you go to recharge and you get that short list of 3 gems to use, scroll down it with WASD (S down, W up, obviously). You aren't limited to those 3 gems, those are just 3 of a list that you can scroll down...
As far as what to do? - Start a new character and play it completely differently in combat (magic vs. melee, 1H vs. 2H, etc) - Play on a different/higher difficulty if possible - Roleplay such that you go in with a set way to play or specific skill trees to focus in and limit yourself to those, for the challenge and the immersion - **Only level the crafting skills naturally, meaning as you progress and acquire the materials during gameplay, rather than buying them all up and leveling "en masse" - Behave differently on purpose, i.e. if you were a more noble/lawful character, kill more people and get more bounties this time, or vice versa. - Try to clear the map - Use a different/unique "Stone" power (rather than the first three forever because you level faster) - Buy the nicest house and make it really cool (full use of weapon racks, chests, shelves, and more... Like a giant trophy room. Personally this is one of my favorites)
Just some ideas. It is what you make it, which can be good and bad depending on your personality. Every time I burn out on a character for one reason or another I just start a new one and play differently / do different factions and eventually I'll be reinspired to play my older ones or approach problems differently.
Alternatively you could also look into gameplay mods. Some are very subtle touches, such as adding a few unique things to crafting skills, that don't have a massive effect on the overall gameplay but improve little things that make a universally more positive experience.

I honestly hated the endgame for the thieves guild. I looked forward to pulling off a big heist but all I got was some religious garbage and batman costumes. That final bossfight was utter shit, too. I mean, I'm playing a stealth character and I'm forced to go toe to toe with an invisible dude with a sword that heals him? Not fun.

There are Misc. Quests which are infinite in number and there are still dungeons to explore (some with random quests also). This is assuming you finish every Main, Faction, Daedric and Town quest.

Starting a new character is...not me. I would much rather have one insanely overpowered guy instead of 3-5 middle-ish characters. Yes, I could play in harder difficulty, especially now that Destruction spells are free :D (100%Fortify Destro) ... The one about the house is cool, but I always use my money on stuff, and unlike oblivion I don't know where the nicest house is. But I will definetively do that.
Side note: Nicest houses in oblivion==Skingrad and Anvil house

I had an idea that might make for an interesting play through, but it is definitely very dependent on restricting yourself within the game world.
I always see a weapon and a bit of armor at the entrance to every "dungeon", you could just go around doing dungeons with these items and then selling them so you don't have a collection of the best gear or your favorite stuff. I haven't really given much thought to what else I would do on this play through, but it seems like an interesting idea to base a role play on.

Are you suggesting to use the weapons found just outside a dungeon to clear it and then sell the items? I'm really bad at restricting myself in RPG's, but I play for both the story and items, but if a quest has me going from Winterhold the Markath I will fast travel, as it would make very little difference if I paid for the carriage to take me there anyway. I think I will be making a character with alot in smithing, conjuration, one-handed(?), destruction and enchanting. I would have loved to put alchemy in there aswell, but it takes so damn long to level TT And when I max out smithing and enchanting I guess I will make armor, and enchant it with overpowered stuff ^^

The best house is 'Proudspire Manor' in Solitude. You have to do the steward's quest and then a quest for the jarl herself before being able to purchase it. Total cost is about 36,000 septims but i only use the enchanting and alchemy labs, which are the only functional parts, so if you dont buy the patio, bedroom, etc. you could save precious coin. unless you've got septims flowing 'out the wazoo'(whatever that is) then you might as well buy the whole package.
