So you guys may or may not know me, I like cooking. It's a hobby for me that I really like and like to think about and stuff. I see people liked my old sushi blog and I always wanted to make another one but I'm lazy as fuck since it's pretty troublesome to cook a little, then take a photo then cook a little more. I usually cook and then totally forget to take photos.
Simple chocolate truffles are made with block chocolate, cream and butter. This actually makes a "ganache". Google for more info not going to bore you. This time I made my ganache a little more runny and flavoured with orange zest and malibu coconut rum. I wanted to make pieces instead of little balls rolled in chopped nuts, so I got my ice tray and filled it with melted dark chocolate, smearing the sides to make a nice "pocket". Then let it set, and poured in the ganache, then poured over a layer of dark chocolate. I was nervous it was going to turn into a trainwreck but they popped right out. Finishing touches and BAM my home made filled chocolate truffles flavoured with orange and malibu.
Yes they taste great.
I think people can make this at home easily... recipes for ganaches/truffles can be found all over the internet, but mostly it's just:
300g block chocolate
knob of butter
half cup cream
Heat the cream and butter but don't let it boil. Add whatever you want now like vanilla, citrus zest etc and let it just simmer for 10min taking it on and off the heat, stirring and pressing the stuff in the pan. Remove the crap and pour over chopped chocolate and slowly stir it in. If the choc isn't melting then pop it into the microwave on medium for 10 second intervals with stirring. DO NOT LET CHOCOLATE BOIL as this will cause it to split.
Then when it's room temp add a little less than a shot of whatever booze you want, I've tried cognac, baileys, malibu and they all taste great and rather clear.
Let it cool overnight in your fridge (or at least 2 hours) and then use spoons run over hot water and roll little balls in whatever you want. Crushed cookies, oreos, walnuts, pistachios, coffee anything goes.
To make the filled ones just use an ice tray or something. The drizzled chocolate on top is just whatever chocolate crushed into a plastic bag, put the bag into warm water. When melted, snip a little hole and squeeze.
