I need tips for some asian food! I'm looking to eat fish two-three times a week, chicken and turkey two-three times a week, and maybe a vegetarian day as well.
It would be good if several dishes use the same ingredients!

I would recommend Korean Tofu Soups. They are the most excellent thing ever devised to be placed into ones mouth in a nonsexual manner.

At least 2 days a week I cook up a salmon fillet in water, oil, hot sauce, something similar to but not soy sauce because I can't read at the store, and chopped up garlic. I stick it on a plate with a big pile of noodles doused with sriracha (these are noodles that are naturally salty but i still leave the extra seasoned water in the pot when I add water to boil them) and a heap of kimchi. It's really simple, really cheep, and tastes absolutely amazing.

EDIT: Where the same ingredients thing is concerned, I do the same thing with chicken, but I usually add the water and noodles while the chicken's still in the pot and serve it up as soup.

go to the fish market and get some fresh fish and steam that shit. dont over steam it though u gotta get the timing right or else the fish meat is gonna be all rough and tough and stringy and shit

Yeah, but do you have a more accurate recipe? I really want to learn to cook many dishes from all the asian countries!(even north korean dishes, if they are allowed to leave the country)

Flounder, sea bass, trout and pompano are great for steaming. Neutral flavored fish is my preference, there are some that has a very "fishy" taste to them and its too intense for me.

edit: Oh and sole, I think its pretty pricey but its damn good steamed.

ok just found this off some random forum but its typed by some chinese person.

First you have to steam the fish...most important step...should never overcook(difficult step)...
Remove fish.Put on serving plate.Whille fish cooks,peel ginger,cut in thin slices,then into thin strips.Peel shallots,cut in thin diagonal slices.Pour soy sauce over fish,sprinkle with ginger and shallots.Heat oil until nearly boiling.Pour over fish.

lol personally my mom doesnt use shallots, just ginger and and uhhhh spring onions ;D

oh and i tried north korean food in china. the waitresses were north korean and shit too it was cool.

and i tried north korean alcohol lol it was sick but really expensive. me and my friends were like damn we're funding their nuclear program!

Vegetable oil or canola is fine and try to get fish/sea food soy sauce, its better.

i actually like to cook assam fish on my own when i'm at home.


ingredients:
assam skin
tumeric powder
lady's fingers(3 of them if you are eating alone)
1 tomato
Fish(promfet works really well. if you don't have promfet, red snappers work fine as well)
6 cloves of garlic
1/2 onion
chillis(1 or 2 will do if you are eating it by yourself)
a few chilli padis(these are fucking hot so don't add too many. i usually add like 2 if im eating alone)
2 sticks of lemongrass
1/4 cube of chicken stock
salt and sugar

not sure how they sell it at where you live but over here, they sell the assam seeds wrapped with the skin mixed with tumeric powder. so all i needed to do was to mix the thing in hot water for an hour, remove the skins off the assam seeds and take the water with the skins, throwing away the seeds and extra residue.

if they don't you can buy the tumeric powder and the assam yourself. if they don't sell it mixed, pound the assam skins, tumeric powder, chillis(diced with seeds), diced garlic(like 1/2 of what you have prepared), 1/4 onions(keep the other 1/4 undiced) together. make sure you pound and mix them very well. you must get a mixture where everything is well mixed and pounded such that you don't have big pieces of things inside.

Now, get a wok, heat it up first with oil for a min on high heat. Get the garlic in for around 30 seconds then add in the paste you just made. the paste will be quite thick so after you manage to spread it around the wok for a bit, add in some water. not too much water till it becomes diluted. around 1/2 to 3/4 cup is usually sufficient. the mixture in the wok has to be quite thick otherwise it will taste weird with the dilute texture. put in the chicken stock, put in the tomatoes and the ladies fingers that you chopped. add in the lemon grass after that and let it simmer for 5-10 minutes until ladies finger is somewhat cooked. after that, add in your fish and just simmer until the fish is cooked. ready to eat

Lime/lemon grass/coconut Thai curries are good, and theres ton's of recipes online.

Learning how to make good ramen noodle soups is really good and cheap. Again theres so many variables you're best off looking online for a recipe you like.

Thai Coconut soups are also very good, if somewhat difficult to get right sometimes.

Oh and you aren't a real man unless you can make decent chow mein.

The spices and seasonings used in these, as well as the coconut base for the sauces, can be used in multiple dishes.

I've tried to find out what to make all day, but my biggest problem is translating all the english names to norwegian!

So far I've only found two things that I can make:
Ramen noodle soup
Fish with soy sauce, coriander, ginger and rice

Recently I've been eating a lot of Szechuan beef and mabo tofu. You can pretty much cook any meat Szechuan style and it will taste amazing.

I wholeheartedly agree. Those tofu soup (in Korean, soon-doo-boo-jji-geh) are so awesome that I can't stop making sensual sounds while eating them.

i could list the ingredients and step by step but honestly, its easier if you just youtube it.

quotation marks because this may or may not be authentically Chinese; it's adapted from a cookbook that isn't Chinese, anyway

Day 1
You will need:
- 3 pounds beef roast (most beef roasts I buy are 1.5kg)
- 2/3 cup soy sauce
- 1/4 cup honey
- 2 tbsp rice vinegar

Cut that beef into cubes. Size doesn't matter so much as that they're equal sizes and generally pretty small. One inch cubes are best advised. Put the meat into a non-metallic dish.

Blend the other ingredients. Pour over the meat. Cover and marinate overnight in the 'fridge.

Day 2
You will need:
- Soybean oil, peanut oil, canola oil, or vegetable oil
- 8 cloves garlic, chopped or minced
- 16 scallions, finely sliced
- 2 tbsp grated ginger
- 4 star anise pods
- 1 tsp ground cloves
- 3 cups beef stock
- 1 cup red wine

Start by draining the meat. Reserve the marinade and pat the cubes dry.

Get a large stewing pot, heat the oil, and brown the meat on medium-high. Should be about 3-4 minutes per batch, around 4 batches in total. If you need more oil, use it. You want a nice colour on the meat. Reserve the meat in a bowl.

Add some more oil and fry the garlic, scallions, ginger, star anise, and cloves for 1-2 minutes or until your kitchen smells rad. Make sure nothing burns - the fond from the beef or these aromatics - or else the dish is ruined.

Return all the meat to the pot, along with the marinade, stock, and wine. Bring it to a boil, then reduce to a simmer and cover for 75 minutes. Then remove the lid and continue to simmer for 15 minutes or until the meat is tender and sauce is syrupy.

Serve over sticky rice.

I recommend this for students because depending on appetites and their demands this will make about 4-5 days worth of meals. I also like to steam some broccoli and put it on top of the rice before pouring the stew over it. The aroma that fills your dingy, cockroach-infested, bed-bug-inhabited, god-forsaken apartment is impressive and vivifying.

Just get corn oil and sautee everything with soy sauce. Maybe hoison on shit like green beans. Garlic for shit like eggplant (you need sugar for that as well) and green beans.

Make sure you get the light colored soy sauce for flavouring.

You can sautee fish too (steaming is also <3), I love basa with soy sauce and hot peppers. Maybe some green onion.

Use sausages or tofu or shrimp/fishballs as your "meat" (or whatever, red sausages just look nice by green food).

Put a lid on the wok/fryer at the end to soften up the food a little.


If you want a soupish meal, you can have beef/potato stew (yes sounds western, but I learned it from my parents who I suppose learned it in China). Just boil the beef pieces first to get rid of the blood (or whatever that white foamy shit is). Then cook it in oil and add in dark and light soy sauce. Get a few teaspoons of sugar as well and then poor water in the fryer (flat fryer works better than wok). Then just leave it, but check on it every 15-20 minutes to add more water.

After a while (personally I cook it for like 1+ hours until the meat is tender), add in potatoes. Stew some more until the water is gone (or keep some water, up to you).

It's delicious. Taste the potatoes before you take it all out, and add salt/sugar accordingly.

Really easy to add onions if you like that, or ginger or whatever.
