Plunderer dropped 2 episodes and I'm conflicted. I'm a man of culture but some things could have been done differently. And the MC (female) is already annoying me.
And to your question: basically nothing. Vinland Saga has carried over and I'm going to finish it. It's decent I would say. The show does a lot better when there is no action (as in fighting). I put Chihayafuru 3 on hold because Numy was right. The only other show I started is Babylon and I'm only at ep3, which I have just watched today. Not sure what to think of it yet. It does some things right but it also smells quite pretentious....
I myself am not really big into sol either tbh. I watch it sometimes but for the most part i enjoy comedies and dramas, which both happen to be sol more often than other genres but it's not that i watch it for the sol

Also, having watched a lot of CGI before, I am always amazed at the CGI used in the remake. I think this remake has probably the best CGI I've ever seen in an anime before. Even better than orange's CGI if I'm not mistaken and afaik, they are one of the best!
I think Die Neue These has done a pretty decent job of matching the general feel of the series, but they a little fall short of the OVAs in a lot of places.
This just straight up doesn't happen in DNP. Maybe this scene was totally invented in the OVA and isn't faithful to the book. I have no idea. However, this one second scene (literally) is so critical to Oberstein's characterization. Throughout the civil war, he's made out to be Machiavellian and manipulative. He deliberately drives a wedge between Reinhard and Kircheis which indirectly leads to the latter's death. The whole point of this scene is to make the viewer doubt their own conclusions. Why would Oberstein try to shield Reinhard? Isn't he supposed to be a self-serving bastard or is there more to him than that? What's his motivation?
I love this scene. The background fades to black as if to emulate Reinhard ignoring everything else, and also to focus the audience's attention. It's clearly still based in reality, as you can see his cape slide off the now hidden seat and the white shadow matching the stairs. His slow walk up to Kircheis, as if in disbelief. It matches Reinhard's and the audience's feelings perfectly.
In DNP:
We get this, it fades to black, and we go straight into the goodbye. That's fine, but it lacks finesse.
Another scene in the OVAs that they didn't replicate in DNP. After Reinhard asks Annerose about Kircheis, Annerose closes her eyes and the call fades into this scene, where Reinhard expresses his renewed confidence. It's a short piece of introspection, but it reestablishes his character, and wraps up the previous scene nicely.
If only Siegfried Kircheis were here to save the directing.
The little things matter a lot to me. They're not enough to ruin the series but it definitely makes it pale in comparison to the OVAs. While DNP has taken a lot of directing cues from the OVAs, their implementation just isn't as good in most cases.
If there's anything that does actually damage the series in my eyes, it's the fucking music. It's so lackluster and flat. If you played it to me outside of the context of the show, I'd assume it was royalty free.
I mean sure, you're never going to match Dvořák or Mahler, but goddamn I hate that OST.
On cgi... I can't agree at all. DNP doesn't really have anything going for it other than decent resolution on their models and okay looking explosions. Ignoring stylistic differences, it looks better than the OVAs but that's not exactly a high bar. What sets Orange apart isn't fancy effects or better technology - IMO their strength is their choreography and attention to detail.

For instance, we got information about why Mittenmeyer and Reuentel were working with Sieg and Reinhard, but that information was never given in the current series. Likewise, there are a lot of things missing.
When I was watching that assassination scene, I thought I remembered Reinhard being on a much smaller platform and infront of his admirals only. I also vaguely recalled Oberstein trying to block the shot too so I'm glad that I didn't misremember that. Having said that, I also don't remember if the current running anime is on par episode-wise with the OVA and I would certainly have liked for them to include more information.
Here's the thing though: maybe it's because I watched the OVA, but it feels like you can tell by then what his motivation is. He has spoken repeatdly of not needing a #2 and that his wish (I believe he spoke of this in current series) is to get rid of the current dynasty and bring on another one, aka he will support Reinhard even if it includes his death if the whole system gets changed. You didn't really need that scene imo to get that point across, but it would've certainly been a really nice touch!
From my perspective, it comes down to the fact that it's much much easier to recommend it to someone who may not be as hardcore into anime compared to telling someone to watch 100+ episodes and some movies. I even balked at the idea when it presented years ago and only started to watch it once I got interested enough. On top of that, the quality isn't that bad. I agree that the resolution is decent and the explosions are okay, and maybe comparing it to Orange was a stretch, but most people aren't going to be paying attention to details tbh even if those details make things that much better.
Music was ok from my perspective. I listened to part of what you linked. Part of it was ok, not bad and some parts could be improved. I'm not much into audio and from my limited experience, it sounds just fine. It's not the highest quality, but it's also not the worst ever. I also found the OP quite memorable while I skipped the OP of the OVAs every time.
The runtime of DNP is pretty close to the original. Episode 23 vs 26.
"Not needing a #2" is something that makes Oberstein inherently suspicious with regards to Kircheis' death. We know that the timing of Kircheis' death with regards to this statement is just a coincidence, but to the first time viewer, it's a clear motive. Hence the purpose of the human shield scene - it doesn't necessarily clear his name, but it does muddy the waters.

Babylon, but it's on hiatus for some reason Kabukicho Sherlock Honzuki no Gekokujou, the AOTS No Guns Life
And a few others. It's been a decent season for me.

Vinland Saga is a victim of its own success. Years ago, the manga got popular based on its art and fights, with the time period and politicking keeping people invested in the story. But in the end, the manga is pacifistic. Or at least, the author wants it to be pacifistic, but has to shove in fights every few chapters to appease the audience. It's contradictory.
Babylon doesn't smell, it stinks of pretentiousness. But it's entertaining in its own right. The philosophy isn't anything particularly eye-opening, but show me enough competent directing choices and I'll watch it anyways.

Oh I see, well, that's not too bad then. For some reason, I had the impression that DNP was running much faster than the OVAs.
I mean, sure, but the thing is, a new viewer can speculate that Oberstein wanted Sieg to be on the same level as the other admirals based on the information given, but to speculate that Oberstein would go as far as getting him killed when we see in DNP that the other noble admiral was acting out of a promise? I dunno. That seems quite the stretch, even if DNP lacks the scene where Oberstein tries to act as a human shield.

Been a great season so far. The isekais this season are also better than the last one too. Cautious hero is a blast to watch with its comedy and Ascendance of a Bookworm is probably the best isekai in recent years, if not since I started watching anime. That kemono isekai is from the same author as Konosuba and is ok so far. A bit repetitive, but it's more of a relaxing watch. We also got some more seasons for Boku no Hero Academia and High Score Girl. Then there's also the drama filled Oresuki and another relaxing anime such as Iruma-kun. You can try Assassin's pride if you want, but pacing and lack of info at times is an issue.
Continuing anime are things like Black Clover, Legend of the Galactic Heroes Remake (DNP), Dr Stone and Vinland Saga. So as you can see, there's plenty of good anime to watch. Just depends on what you like to watch and try.
To answer my own question (don't know why I didn't), I'm watching Cautious Hero, Iruma-Kun, Assassin's Pride (behind a few eps), No Gun's Life (behind as well), the returns (BnHA, BC, Dr. Stone, Fire Force).

The prologue is Vinland Saga's crowning jewel. The slow realization that Thorfinn isn't the main character here, Askeladd is. Thorfinn seeking revenge for Thors is a sidestory to the main plot, and in the end, he doesn't even get to carry it out! It's beautifully executed.
When the show was announced to be 2 cour, we knew this was where it'd end. This is because the next arc is infamous and divisive. It's nicknamed "Farmland Saga", and is basically the polar opposite of the prologue. Action and intrigue get replaced by a slow, plodding plot that doesn't even change locales. Remember when I mentioned how the author wants Vinland Saga to carry a pacifistic message? This arc made it clear.
Maybe it'll be better in the anime, but the manga was excruciating during this time. With its monthly release schedule, the arc took a solid 2-3 years to complete. While I don't dislike the current state of the manga, it is a very different story from the time when it was popular.

Hm, I'm sure the anime will feel less stretched than the manga. Weekly episodes and multiple chapters per episode will result in the arc being resolved in a single cour or less. Not saying that it won't feel slow but I suppose chances are that it will be a bit better.
That being said, I fully agree with you on Askeladd. He became the main character after the first handful of episodes and the whole transition and course of the story was beautifully executed indeed. I'm also glad there wasn't more focus on Thorfinn because he has a somewhat annoying character writing.
I probably won't fill the form this time. I've watched and finished a grand total of three 2019 anime this year: OPM2, Mob Psycho 2 and Vinland Saga. Well and Babylon but that's not going to finish until the end of January.
I'll just list anime I liked and thought was interesting this year.
5-toubun no Hanayome - I only watched this initially as the english name of "quintessential quintuplets" tickled my fancy. A harem show but the male has a distinct personality as opposed to a passive bland observer and has a vocabulary beyond "eeeh?" I enjoyed it, but I don't know why.
Mahou Shoujo Tokushusen Asuka- A typical magical girl show, with a bit of humour.
Fruits Basket - I guess this is what they call a "reverse harem". Good harmless fun.
Dr. Stone - Don't like the artwork, but the interesting concept and plot completely overshadows that.
Enen no Shouboutai (Fire Force) - A shounen that is well paced and well animated.
Honzuki no Gekokujou (Ascendence of a Bookworm) - The isekai genre has finally made something worth watching, by ignoring most of its central tenets, and it's brilliant.
