this is an overview of all the different foliages which are by default assigned to specific textures but of course you can and should always experiment with this and mix it up to create something new and interesting.
So first of all I should probably explain to everyone who doesn't know how to assign different foliages to a texture how it works:
First start the data editor.
Then you go to Data Type: Terrain Textures and search for the texture which foliage you want to change.
Click on it and go to Doodads.
Here you can add/remove values. These values represent a type of model or in general a mix of models that will appear as your foliage.
The options for every value are pretty self-explanatory:
Model: Choose the model/set of models you want to use (which includes like every model there is)
Probability: How probable it is for this model/set of models it is to appear, the higher you set it, the more there will be
Random Rotation: If the models are rotated randomly. Normally you will always want this cause otherwise it looks straight and unnatural.
You can add many different values and vary the probabilities to get some nice mixes.
As an example, in this screenshot I added values with the models of „Agria Tree“, „Agria Underbrush“, „Agria Foliage“ and „Agria Debris“ and got his (btw, obviously you would not use stuff this big as foliage on playable areas on your map ):
