Oh, I thought you were using an aftermarket heatsink since you overclocked your Phenom. All retail processors include a heatsink. If you're going to be overclocking though, it's recommended you pick up an aftermarket heatsink. A Coolermaster Hyper 212+ for $20 should do the trick for a 4.5GHz - 5GHz overclock.
Well you are getting Eyefinity so you may sometime in the future get an expensive sound system which will benefit greatly from a discrete sound card =p When there's ATX boards available at the same pricepoint as ATX boards than it's good to leave your options open. What if the integrated sound or NIC becomes faulty over the years? Easier to get a discrete card than to replace the entire motherboard. But it's up to you.

@Skyr : I believe the full ATX Z68 are more expensive than a full ATX P67. Would you recommend getitng a P67, and lose the integrated GPU ability?
Also, my case is 150mm max I believe (AZZA Solano). I believe coolermaster is 160mm

Hyper 212+ is, indeed, 160mm. Awesome cooler for the price though.
I would almost say that with that much airflow, the stock might be ok with good ambient temps.

The MSI P67 G43 (or any other G model) would be a good choice for a budget full ATX board capable of 8x 8x CrossfireX.
You can stick with the Intel heatsink provided to see how well it does as suggested already or you can just grab a Coolermaster Hyper TX and install it right from the get go. It's 136.5mm in height and can be found for $17.

The performance difference between single and dual channel aren't going to be noticeable.
Only the Z68 D3H and Z68 D2H offer 8x 8x at around $120.
All the core i5 bundles on NCIX this week are bad. Buy your parts separately.

I5-2500k = 204.99$ @3.3ghz Mike's Computer Shop. Not sure if NCIX will accept this pricematch. First time I hear about Mike's

I think I've read somewhere that 2500k = unlocked or something, so easier to OC. Is it true? Trying to save as much as I can ^^

Overclocking on Sandybridge is done entirely through the multiplier since the base clock is linked to every other component (USB, SATA, PCI-E, DMI, etc) so you can't increase it.
The "K" model has an unlocked multiplier. All other models are limited to +4 (ex. core i5 2500 would only be capable of a max of 4.1GHz and a core i5 2400 would only be capable of 3.8GHz).
In other words, 2500k is required unless you're satisfied with gaining 400MHz.
Never heard of Mike's either but HLT and Vastech sell for approximately the same price as well.

Hmm, that is very interesting.
What is a normal OC on I5 2500k? 4-5ghz? Like, not upping the voltage or anything. I know how to OC, but I've never done anything extreme, just sticking with the stock voltage.
EDIT : Are there any articles on how much gains we can expect from 4000 vs 5000mhz? I only have a 5770 for now. If I buy the I5/mobo now, I'll probably wait before buying the GPU. And... eventually, the Monitor ^^
I still own that 250 gift card from futureshop. The 6970 2gb is sold out though. And I believe Nvidia requires sli to be able to make a triple screen setup, right?

Most chips are capable of ~4.4GHz at stock voltages. Some are capable of 4.7GHz to 5GHz with less than 1.3v. My stock is 1.24v and is capable of 4.4GHz.

Nvidia's version of Eyefinity is 3D Surround and yes SLI is required for it.

Well for one, you are spending way too much damn money on a PC. You could probably spend 1000 less and get marginally less performance. I don't see any reason you would need a 900w PSU, a 100 dollar aftermarket cooler, and of course there's no reason you should get 16GB of RAM.
If you're spending that much money might as well buy two graphics cards.

A 24" monitor doesn't need a GTX570.
You don't need a i7, it should never, ever be recommended for anyone unless you are doing REAL WORK.
Logitech G110 is trash, doesn't have the semi-useful screen like its more expensive brother yet has terrible, mushy keys and questionable build quality.
Antec Nine Hundred Two is a rubbish case, surprisingly tight to work with and very noisy because there's holes everywhere and the hard disks are mounted straight to metal. If you must have 16GB of memory (seriously why? people will laugh at you), get two sets of this.
You only need 500W max to run a simple single GPU system.

DVD burner should run closer to $20. It's ridiculous to spend over $2k on a PC and not have an SSD, and without an SSD using the Caviar green as an HDD will be a major performance hit with the slow RPM.
Given some of your selections, I take it you're less enthusiast, more guy with a large budget and stars in his eyes? Would you be interested in saving a pile of money for components that are nearly as high of numbers, and way better deals?

Australia is shit and prices are stupid. DVD burners for whatever reason are now like $35 at the cheapest from MSY and certain high end goods like HP and Apple monitors are like $300-1000 more expensive than the American prices.
We've always been like this with retailers. Big AAA game titles like L.A. Noire are around $110 if you buy from a typical department store like Myer (of course it means you buy online from Play Asia).

Fair enough on the pricing. It's still a rather terrible idea to run any system off a Caviar Green though, let alone an i7 with hysterically pointless amounts of RAM.

@Skyr, would a SLI 570 or 580 (using my 250$ giftcard from Futureshop) be a good choice, even though they do not have a lot of memory? (1280/1536)
