I've just been using some PSU calculators and the 450w PSU you recommended seems kind of low:
i5 2500k (overclocked to I'm guessing 4.0+ GHz) GTX 560 ti 1 7200RPM HDD Z68 mobo 2x2GB DDR3 RAM 1 DVD-RW drive.
Different calculators are giving me between 450 and 550.

So then, anyone got any recommendations on what PSU and case I should get? I picked a 750 Watt because I thought I'd need it for future crossfire with that 6970, but if it's overkill please tell me what to get.

What calculators are you using? Most of them are designed to sell products.
This is the most accurate one: http://extreme.outervision.com/PSUEngine Your configuration's minimum power supply is 322w with a recommended power supply of 372w.

750w is a comfortable wattage for CrossfireX. People suggesting a lower wattage power supply assumed you never had any intention of doing CrossfireX since you never mentioned it and you only wanted medium settings so CrossfireX was extremely overkill for what you wanted.

What are you using it for? Gaming, streaming and other business (mostly Word, Excel and music)
What is your upgrade cycle? Until my computer can't handle games at low settings
When do you plan on building it? Within this month
Do you plan on overclocking? Rarely, if ever
Do you need an Operating System? Yes, I will probably sell this laptop when I build this new one
Do you plan to add a second GPU for SLI or Crossfire? Haven't yet so I probably won't since I don't know how they are used.
Where are you buying your parts from? Good ol' USA (God bless America and everywhere else)

I actually used that calculator and just did it again and got 411 watts. I'm including the fans, the optical drive, OC to 4000Mhz.

I just ditched the 1 TB drive as I probably won't really need it (at least right away).

@skyR Thank you! You say stream and play on low at 1080p smoothly. If I do play separate from the stream will this setup handle max settings? If not, what needs to be changed for that and what would it cost?
Also, I'm curious of the cost of a computer that an stream well on high quality settings.. How much would that run me (not that I want or need it)?

Streaming is dependent on the processor and graphics settings is mostly dependent on the graphics card but the processor plays a role in it too.
You would need a better graphics card to play on high settings, this would cost roughly another $100 (Radeon HD6850, GTX 460, or better).
If you were to say get rid of streaming requirement, you could get a core i3 2100 instead which would take roughly $65 off your total. Most games only utilize two cores so there would be little difference between the dual core processor (core i3 2100) and the quad core processor (core i5 2400). A quad core is necessary for streaming since the game will be using two cores and the two other cores will be used for your streaming.

@skyR I will probably go up to the better graphics card. What one or two would be most cost effective graphics cards should I get?
When I stream I don't want (or really need) to show my face on webcam. I can always move to that later. I really just want to stream voice and the game. Does this have any effect on the information you gave me?

@Aphoristic--I'd be careful with AsRock boards and Radeon cards. While certainly some people have had them work, I had problems with a 6950 and a P67 Pro3 where the two were simply incompatible. The card worked in another machine and another card worked with the AsRock board. From googling other forums, I'm not alone. I'd avoid the AsRock board if I were you.
I'm aware there's no reason they shouldn't be compatible, but at least in some cases they simply seem not to be.

A core i3 2100 won't be capable of smoothly streaming.
The HD5830 is a good card and will be capable of handling Starcraft II on high but will struggle with other games on high.

Would you recommend that card or a 1 step down card? All I will be playing on this computer at the moment is Starcraft 2, World of Warcraft and soon to be Diablo 3.
You also said Asrock H61M-VS @ $60 but in a reply by Ingenol he talks about compatibility issues with Asrock boards. Are you positive all of the equipment work together?

@skyR Probably going to get his recommendation on those 3 items just in case. I haven't done any streaming yet so I'm sure I an hold it off for another month or 2 to get the cash for that processor. I'll probably take the rest of your recommendation though. Try to practice up before the world laughs at me
