I actually could spend 40 more. What is the benefit of having that USB3 though?

It's faster than USB2. So if you don't have any external USB3 harddrives or USB3 recording equipment or USB3 something, you don't need it.

Very little, yet. Not a whole lot of peripherals need the extra bandwidth, and most of the few uses available, you'd likely know about if you were likely to have a use for them right now.

Yep, just a future proofing thing. You could always get a USB3 add-in card down the road if needed.

Looked on Google and it looks like my externals (mouse and hard drive) are both USB2. With that said, which package should I get for what I want to do (stream and game)?

You need quad core to stream SC2 effectively.

Anything worthy at futureshop then? 6970 is out of stock. But I think they have some 6870, but doubt it is a good card, since I could get 570/580

Only ones worth considering for an Eyefinity setup is the GTX 570 or Radeon HD6970.
These prices are absurd so if you buy from futureshop, please do a pricematch.

Also, I have the 250 gift card... so a little bit Overpriced is not a big issue.

But wouldn't you want identical monitors for Eyefinity?
Most of the TN panels are nearly identical in terms of quality and performance so it doesn't really matter which you pick. It's just different branding, connectivity, features, etc.
Why not just save the gift card to spend on future birthday / christmas gifts?

I'm a little bit tight on money, so that's why i was hoping to use the 250 gift card for something (getting CPU/Mobo : not possible since Futureshop doesn't carry Sandy bridge)
Getting Vid Card : 6970 is out of stock. Should have tried to buy it via Pricematch... but I was still waiting...
Getting a Monitor : This may be my last option.
Another option, of course, would be to get something else... game, birthday/christmas gifts, etc... but I could really use that 250 gift -.-

The HDD is overpriced, and 6Gb/s SATA on a HDD is pointless anyways, spinny drives can't saturate 3Gb/s.
The motherboard isn't SLI ready, they have to get that enabled through Nvidia. (Nevermind, they just didn't get all in my face with it like most people do on product pages)
Go with just 1333 mhz memory for ~$40, you shouldn't pay more than that for 4GB.
The PSU is only decent, at best, but should do what you want it to. skyR or Myrmidon can probably tell you a better option for less though.
EVGA has kickass support.

You sure that specific board is SLI ready though? They normally list that on the Newegg page, doesn't say it anywhere, and neither does the MSI product page.
