Firstly, that build is designed around an overclocking build, which will have large gains in RTS, and in some MMOs. Generally MMO and RTS titles tend to have lower graphical requirements, so consider dropping to a single card configuration, which will only really hurt you in demanding 3d graphical games, and if you don't crank up the anti-aliasing past 4x, should be pretty much good for max settings.

So the changes I would make (if you are set on not OCing):
Motherboard: Cheap h61 or h67 depending on whether or not you want sata III support.
CPU: 2500/2500k whichever is cheaper, 2500k if there is little to no margin.
GPU: One of 7850/7870
PSU: A quality 450-600 watt unit
RAM: Cheapest 2x4GB 1333 or 1600 mHz ram, rated speed makes no useful difference to non-niche uses
SSD: Whatever flavour is popular right now, I'm a little out of the loop (GET ONE!)

No cpu cooler (only required for overclocking, or if you need an uber silent pc. Note GPU noise>>>CPU noise, so don't bother if you aren't doing anything special with the GPU cooling)
No bridge.
I would get a less expensive case, but this is personal preference as a good case can last half a lifetime.

The components decay and will slowly output less wattage. All PSUs suffer from this. The fan usually give up way before this happen enough to impact your build. We're talking 10-20 years here for a quality PSU depending on heat.

I'm still conflicted on whether slightly better stock performance and PCI-3 support (so I can SLI my GTX 680 without bottlenecking in a couple years) from a 3570K or the lower price and the in general better overclocking you get from a 2500K for just gaming (which is what I am doing) is better. Anyone have suggestions?

Ivy Bridge is superior. It can achieve decent overclocks just fine. You don't need to push 5.0ghz for gaming.

By the way the M12II 620 isn't going to be enough power for SLI 680's and an overclocked 3570K, well at least not comfortably enough if you want to overclock the 680's as well, as well as not hear the fan noise (you're building in an R3 after all). It doesn't have 4x6pin connectors anyway.

I'm agreed with the above two replies. [edit: wait I misread your post whoops]

I wouldn't particularly suggest thinking about SLI GTX 680s in a Fractal Design R3, though I'm sure it'd be okay with a fan in the side slot and maybe the top opened up...maybe defeating the purpose of having such a chassis but oh well.

Those are external exhaust models though so they should be fine with a side intake and a secondary front intake (and the top could be left covered, reducing the noise directed toward the user). There's also 2 slots of space between the PCI-e slots on the ASUS P8Z77-V Z77 so the top card won't be starved for air intake.

EE cards generally go well with sound dampened cases don't they?

Fixed it. You're right, 6870 is slightly better. I sorted after manufacturer so must have missed that. The 460 should be a bit cheaper than that normally.

690ii is the cheapest of the ones you listed. If you don't value the case as much than just get the cheapest case.
