Fights can be over too fast, if you are not watching one sec. That was always the problem with sc2. In BroodWar you had to fight your way through the whole game, gain small advantage and fight it out till the end. In SC2 the problem is: if you play out your 300+ apm terran style perfectly it is an awesome race, in the beginning of WoL some considered it even OP. But even in WoL there was one problem: if you don't look at your army for one sec or clumb it up: you die to either banelings on creep, fungals or 2-3 storms. After 2 secs everything can be dead. And that is SO annoying as you try to gain advantages 15-20 minutes and then you lose because of 2-3 casts or units with extreme speed and splash damage etc.(ofc you could split, and micro etc.)
I like back and forth games, but at this point of time, only PRO(!) TvZ seems to be like it. Ofc the game is balanced around it but below that level it is just amazingly frustrtating to lose to a much lesser player that just counts on surprising you or a moves and pushes some button after a few secs while you split and cast and drop and harass like a madman.... but that is no balance whine as said, it is just the ladder experience for some.

Protoss has less mineral mining in TvP because they are more gas dependent but protoss is usually not behind in income compared to terran because their mineral/gas ratio of units is much better than terran ratio. So in typical TvP 2 base protoss actually has slightly better economy than 2 base terran so that is why terran needs to be ahead a base to be even. In this particular game, MC was on 45 probes most of the time which is like 20 short of what protoss should have. No, usually terran is ahead in economy, mules.
