Every viable strat you add to a race, no matter how independant from the already available options, is something more your opponents have to prepare for. For example, let's say that some matchup is at 50% winrate but side A doesn't need to invest in scouting options because they know what side B is doing. Add a completely different offensive option to B and now A has to scout, hence possibly shifting the balance. It's good for variety, but not so straightforward for balance. By that logic, this game should have EXACTLY 1 playstyle that's viable per match up and players are only allowed to play that style every game in order to ensure the best possible balance we can ever have. Please spare me. You can have your cake and eat it too. This game can have more diversity and still be balanced. Brood War managed to do it, WoL in its earlier iterations managed to do it. HoTS can do it also. Pushing for more diversity in order to stave off the kind of metagame stagnation we saw at the end of WoL should be a priority. It's better for the players playing, and its better for the spectators. It just improves the game.

Late game PvZ armies use Void Rays already as it is, and even if they don't the difference between Ultralisks and Siege Tanks is that Ultralisks are melee units so they need to actually close onto the Immortal to kill it, which can easily be stopped by just throwing Zealots in front to buffer while the Immortal deals its ridiculous anti-armored damage to kill it. Even so, Ultralisks are almost never used vs Protoss since Swarm Hosts and Broodlords are superior late game units anyway. Quod the fuck Ultras feature every PvZ lategame now. Void rays don't cut it. Infestor/ultra/queen smashes any protoss army until you can stall long enough to get enough immortals out and even then they trade decently if you add vipers with blinding cloud. HerO vs Jaedong game 2, good example.
