Probably because knowing that a strategy is going to happen doesn't guarantee that you know what to do to shut it down.
Day9 mentioned something in an SC2 daily that stuck with me since I heard him say it, and it was something to the effect of: It's ok if your opponent can see what you're doing, if what you're doing is the right (or is a good) thing to be doing.
TSM plays very well to their strengths. And that last word there is key, "Strengths." It's often the case that when a team is really, REALLY good at something, the only way to shut it down is to do the same thing better than them.
I woud also argue that not only is Bjerg the strongest mid in NA, but Santorin and Lustboy are arguably the best players in their respective positions as well. It's really tough to shut down the 3 best players in their position, executing a strategy that amplifies their already natural advantages.

Same reason why China is such a strong region even with their incredibly questionable tactical/strategic play: mechanics.
Starhorn Royal Club last year made it all the way on finals on largely mechanics.
Don't get me wrong, Lustboy and Santorin have very good roam and rotational play, but it's easy to use the same strategy over and over again when your mid laner is currently in contention for one of the best mid laners int he world.
