If I requested a mail ballot, am I still allowed to vote in-person instead? If I decide to drop off my mail ballot at the polling station, do I still need to stick a stamp on the envelope?

Though I am not intimately familiar with California voting law.

In CA you can just void your mail in ballet and vote in person, In ohio you can vote on a provisional ballet that wont be counted until 10 days after the election (this is because a provisional requires no id, you have the 10 days to prove you are who you say you are or your vote does not count)

In close states, you look at a few key counties, in other states, it's just normal (California, NY, etc going democrat, Texas, Wyoming, etc going republican)

Country is very polarized by states, so we already know which candidate most states are voting for, only the battleground states can't be called until the end.

It's pretty much about the history of the state and the people living in it. For example, in the South, there are a lot of Christians and rural areas which have, for a long time, voted for Republicans. Plus, exit polls have already confirmed that certain states will be won by certain people.
