Although I was playing games with my family back on the ZX Spectrum (Yes, ZX Spectrum, the console that would have you waiting 30 mins to load up a single game, but fail to load more than half the time.. wow), I guess I was too young for them to really have formed any real memories of the games themselves.
I would have to say that the games that shaped my early years (in regards to gaming) would have to be:

Very interesting and well-thought out plot line and puzzles. Very enjoyable stuff) Zelda :OoT (mentioned already) Goldeneye (my first ever taste of multiplayer FPS) Mario 64 (of course. Played it through with my friend in one day. One of my greatest gaming achievements  )
There are so so many more that I could mention and that some have been mentioned already, but those lot were very influential to me personally, because of the amount of time I spent on each of them, not just by myself, but with my family also. Some really great memories.

Cannon Fodder 1 (not 2) Basically the most bloody game ever...
Some shameless plead. Anyone has the orginal PC CGI intro of Cannon Fodder (the one that needed over 620KB of free basic memory to run). That was one of the most kick ass old CGI's videos ever made... Worms 1 had some funny ones but that intro of cannon fodder was still better.

Indiana Jones and the Fate of Atlantis
Man this game rocked... Well had some bugs (especially with Plato diary) but it was definitely one of the best games ever. Finished one route and got stuck on Indy physical route in the desert with a broken german car (didnt ffound a way to get a spark... well i was young)
Final Fantasy 7 Well the only FF that i finished... Man i need to finish the rest... The classic RPG with the best skill system (hated the one in FF8). Materia slots for ever. Finall fight was a true war of attrition for me due to me making ultimate bad choices in the last parties forming (was thinking i would be able to change between the two parties before the final battle) and a very small supply of cure small (or whatever it was called). Imagine a party that was almost completely out of mana, usuable summons and in status mini... not to mention that the Vincent had a limit break on with a mini status (and he had like phoenix, and all bahamuts...). It was annoying 4h battle ^^;;
Tie Fighter
Way better than X-wing. Was a reason for a rash departure to hardware heaven of over 5 mouses (due to the fact that it didnt work good with my joystick). Had some bugs if you destroy "some" random units your campaign would crash...
Jagged Alliance 2 One of the best tactical turn base strategy games ever. Lots of side quests, weapons, npc and more.... Once i played on sci-fi setting.... Than never again... Those lobsters or sth were ultra annoying (they forced me to cheat... due to jamming off all weapons in my team right before the queen lair)
Dune 2
The first RTS. Also till CnC: RA1 it had the most unique function in any RTS the double weapon system which chose which weapon to use at the time ----> Harkonen Heavy Infantry. If enemy is atacking use the rockets, when the enemy shortens the distance depending on armor of enemy use either miniguns or rockets... RA1 Mamoth tank was the unit that used the similar system. And Dune 2000.... worst RTS ever.... it destroyed Dune 2 legacy.
Kyranidia 3 The humor almost killed me.... And "Daddy" at the end was priceless

I will just define my childhood from being from the earliest games I remember and love until the end of high school.
Kirby for Nintendo Shining Force for Sega Genesis Death Gate Cycle for PC (played with uncle and went through it with him) Kings Quest series and similar games (same uncle during those same summers ha) Sword of Shannara for PC (also played with uncle) Mech Warrior Series for PC ( also played with my uncle during summers spent there, he would do the mission then I would. Great times) Warcraft 1-3 for PC Diablo 2 and LoD for PC Starcraft and BW for PC Final Fantasy 7,8,9 for PC/Play Station The Elder Scrolls 3 Morrowind for PC
All these games occupied tons of my time and/or just impacted my thinking on other games and in other areas as well.

The amazement I felt when playing this game, and others... the magic... all that are the best memories of my childhood 
So many fond memories... I could never truly do justice to all the excellent games that gave me such feelings of wonder.
Such a great trip to nostalgialand too, seeing all the other games I loved in this thread, represented by everyone... gives me, in the words of Daynine, Bubbly feelings indeed

Lost Vikings is probably the most epic game I ever played. I loved it.

Super Mario and Zelda games into Final Fantasy/Chrono Trigger games into SimCity into StarCraft/BW...after SC there were a few more games like the Sims, but really I quit most games after discovering girls. Since then, SC2 is really the only game that I have played since.
